Tonight is chicken with cuts in it, stuffed with sun dried tomatoes and baby bocconcini. With some vegies I guess. Uninspired with the warm weather.
May all dairy items in your fridge be of questionable vintage.

Got home too late today to cook the roast pork so made a crustless quiche in the oven and had it with a salad.

Although I did make some blueberry and chocolate friands in the TMX this evening.

Mmm...Friands sound lovely!

I've made Chelsea's Condensed Tomato Soup to go with her Porcupine Meatballs. I made Brazen's Carrot Cake yesterday, so will have that for dessert.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I made homemade fettucine for the fist time. I made cannaloni the other day and it was such hard work with the rolling pin that I went out and bought a pasta roller thingy!  I made a creamy, bacon, mushroom and broccoli sauce in the saucepan and OMG it was delicious!!
I also made rhubarb and apple to have with yoghurt for breakfast.

Pasta rollers are great.  I only ever use the lasagne sheet roller on mine now as I can't be bothered cleaning the others after use.  When making fettucine I just lightly flour the pasta sheets, fold them up and slice them up with a butter knife.  The pasta strips shake out easily from being folded if they are floured. I learnt that tip from watching Jamie Oliver.  :)

We had hamburgers

dd3's request of the week.
Made the roll dough in the tmx. Pattie mix made in the tmx. (oh and the tomato sauce was also made in the tmx previously)

Oh and the looked better once squished down, lol .

Maddy I'd love your slow cooked mexican chicken recipe please, I'm drooling here!!

Zan, it was a Sally Wise recipe (slow cooker) book.
She called it Spicy Roast chicken, but it wasn't that spicy (you could add in chilli if you wanted some heat), and she used a whole chook, but I used thigh pieces.

Slow cooked Mexican chicken

Chicken rub
1 Tbsp. sweet paprika
1 tsp. ground cumin
1 tsp. ground ginger
3/4 tsp. ground coriander
1/2 tsp stock powder or salt
1/2 tsp ground cinnamon
1/2 tsp dried mint
1/2 tsp sugar
1/4 tsp mustard powder
1 tsp cornflour (optional)
1kg chicken thighs chopped (or whatever amount you wish to use)

Pop all these ingredients into a large ziplock bag, and massage the rub into the chicken.
Can leave in fridge to marinate until your ready to cook.

Into slow cooker add:
1/4 cup chicken stock (I used 1 cup because we like extra sauce for the rice), mixed together with 2 tsp sweet chilli sauce (1 used 2 Tbsp.)
Pour into slow cooker, place chicken on top, and cook on HIGH for 3 hours.

I mixed in 4 Tbsp. cornflour mixed with 2 Tbsp. water, at 2 1/2 hour mark to thicken.
