Today I thawed out 1/2 batch of Sloppy Jo, added 1/2 can baked beans and topped it with TMX mashed potato for a quick lunch. I've also cooked the German Cherry Crumble Cheesecake from the EDC for my Saturday lunchtime visitors (because of the good reviews it received,) and made Quirky Jo's Carob Almond Smoothie after a trip to a health food shop.  It was really nice, thanks Jo - never thought I'd see the day I'd be making something like this. Oh, almost forgot - made a batch of junket successfully at last.

Yesterday I made crustless quiche (another of the recommendations DH was given by you all) and baked it on top of the risotto leftovers from the day before.  It got a 2 thumbs up from DH and DD(1), who have asked that it becomes a regular feature on the menu.

Today I chopped up a large batch of dried homegrown rosemary to put into the herb jar (it avoids the 'bits' that DD hates using it this way) and made garlic rice.  I also made Bron's tomato sauce, but haven't done the meatballs to go in it yet.  So we had leftovers for dinner today instead  ;D  Did we let you know that DH made the meatballs, sauce & rice a couple of days after I got back from hospital, by the way??  We all LOVED them.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Yesterday I made KFC.   Yes tha'ts right ;D ;D ;D.   Only the skinless chicken was dipped in yogurt and then rolled in a mix of herb and spices ( zapped in the TMX. )  The herbs and spices were mixed with flour and breadcrumbs .   Then sprayed with rice bran oil and  cooked in the over for 1 hour.  very yummy.   Will post if anyone is interested.

Today I made tomato paste from some cherry tomatoes.  We will eat the KFC leftovers cold with salad tonight.

Ooh, me too please Chookie.  KFC used to be DH's favourite treat once a year but then he went off it and we haven't had it for years now.  It was getting a bit greasy for our liking so your nice oven baked version sounds great.

Healthy KFC sounds good. It is so long since I have had it I really can't remember what it is like. We occasionally have Red Rooster. About every 3-6 months. Too much in the freezer from Termite that we can use up.
May all dairy items in your fridge be of questionable vintage.

KFC, for those interested I did a bit of research on the internet.    Many years ago I made a recipe from 'In the kitchen with Rosie'  ,Oprah's   favorite recipes.   Didn't do Oprah much good and I doubt that it will do me much good either.  However I remember it as being tasty.   One of the ingredients is Old Bay seasoning. so you have to make this first.  I think that the Bay part of the title is the predominance of dried bay leaves in the recipe.  As you can use this coating for chicken ,pork, fish and,fish cakes.
 I suggest you make double and keep in an air tight jar.

Old Bay seasoning

Place all in TMX bowl
About 6 dried Bay leaves
2 teaspoons of celery salt
1 1/2 teaspoons of dried mustard
1 teaspoon of black pepper corns
1 teaspoon of paprikia
1/2 teaspoon of celery seed
1/2 teaspoon white pepper
1/2 teaspoon of nutmeg
1/2 teaspoon of ginger
1/4 teaspoon pf allspice
1/4 teaspoon of cloves
1/4 teaspoon of crushed red pepper flakes
1/8 teaspoon of mace
1/8 teaspoon of cardamom

Zap until a fine powder is formed.  May have to scrape down sides.


Un-fried chicken

4 large chicken breasts ,  no skin
1 cup of low fat yogurt

For the breading mix

1 cup of dried bread crumbs
1 cup of plain flour
1 dessertspoon of Old bay dressing
1/2 teaspoon of garlic powder
1/2 teaspoon of Creole seasoning
1/8 teaspoon of ground pepper
Shake of cayenne pepper
1/2 teaspoon of dried thyme
1/2 teaspoon of dried Basil
1/2 teaspoon of dried oregano

Mix all together
Pre heat oven to 200
dip chicken into yogurt and then into bread mix,  make sure that the bread is well stuck on.    Place on a VERY WELL OILED tray.
When all chicken is breaded and on oven tray spray with oil.  cook for 1 hour.
Turn after 30 mins.

If you don't have some of the ingredients, improvise.   If you cant be bothered making the Old Bay seasoning,  substitute with paprika.   Some recipes  call for MSG seasoning which is not popular in Australia.

Thanks Chookie, you forgot to tell us to cook it for an hour.  This seems a long time for a chicken breast, was it still nice and moist after all that time?  Looks like another huge shopping list coming up - this forum has bumped my grocery bills up these last couple of weeks with having to get all the ingredients to try different things.  I might have to shut my eyes when I come on here in future  :P :P
