Thanks Karen, will try that. If I make a batch for myself, there are heaps of leftovers so it is going to be time consuming getting it into all those little trays but then I can see how much easier it will be to just blitz a bowlful at a later date. DH very rarely eats cold things like ice-cream or sorbet so it's great when the grand-kids come down to visit - they love it.

JD - make sure that you add some liquid to the mix - yoghurt or juice to help speed up the chopping of the cubes on the second go.

WHEN I have leftovers  ;D ;D ;D....I set it in a flat dish (usually a tupperware container as it turns out easier), turn it out on the cutting board, chop with a knife into blocks and then into the TMX

To purchase lemon is my favourite, I tried once when first brought the TM but was a bit of a flop. Can someone who makes lemon successfully tell me how?


Have you tried heating water, sugar and lemon zest (strips) to get a lemon syrup that you freeze for the ice blocks and then blitzing with fresh pieces of lemon?

I agree with Kathryn - putting the leftovers into ice cube trays is way too much work - I use old ice cream cartons and I can usually scoop out with a hot ice cream scoop and re blitz.
For lemon sorbet I always use some lemon rind with the sugar then use at least one lemon with skin cut off. It is always successful.

I love pineapple and mint with a dash of Creme de Menthe. I use less sugar.Very adult.

Have done watermelon (by itself) and watermelon and mandarin - both delish.  Did pineapple the other day which was beautiful as well.  Even though it's freezing over here at the moment, I still have to make sorbet - major brain-freeze though  ;D
I put my leftovers into snap-lock bags and flatten to put in the freezer (a tip from my consultant) and then it's easy to break up/chop and reblitz.

What a great idea :-* :-* Easier to fit into spaces in the freezer & make smaller portions too.  Love it, now why didn't I think of that myself. Talk about brain freeze, I get it without even eating sorbet  ;D ;D ;D ;D

JD - you can put them into ice-cube trays and when frozen place into bags and label for a "rainy" day - if they exist.

The fruits are as most - rockmelon, watermelon (with chocolate shavings sometimes), green apple with some grappa, persimmon, berries in all forms, pear with ginger, lemon with olive oil (not my idea - got it from The Age years ago), pear and ginger, tomato with smoked paprika (not for dessert!), fennel and green apple, .... think about some of the others

When we have leftover sorbet I put it into those icypole containers you can buy (with sticks in) and then freeze them. It's easy for anyone to grab a 'healthy'treat when they need it.
May all dairy items in your fridge be of questionable vintage.

Our newest favourite is CHOCOLATE SORBET!!!  We had friends over on the weekend (fellow TMXers) so I decided to tweak a choc sorbet recipe to make it quick for the TMX and it worked!  So decadent!  Will post recipe and photo soon.  :)
