Lemongrass Prawns & Scallops

Makes 2 big serves or serves 4 as an entree.

Ingredients
deseeded large red chilli to taste - I used 1/2 but you could use a full one if you like it spicier.
1 clove garlic
2 large shallots cut into 5cm pieces
1.5 teaspoons shrimp paste
2 tablespoons fresh coriander leaves
200mls coconut milk
2 small or 1 large stick lemongrass, outer leaves removed then bruised and cut in half.
1 tbspn Thai fish sauce
1.5 tsp palm sugar
250g green prawn meat
175g scallops with or without roe
2 heaped dessertspoons cornflour mixed with a little coconut milk to thicken.
Steamed rice to serve.

To make the chilli paste - place chilli, garlic, shallots, shrimp paste and half the coriander into the TM bowl.  
Add 1.5 tspn coconut milk plus 1 tablespoon water and mix 6 sec/speed 8.  Scrape down sides and repeat this step.
Set the mixture aside.
Without rinsing the bowl, pour in the remaining coconut milk along with 1.5 tblspns water, add lemongrass and simmer 10 mins/90o/reverse/speed 2/MC off.  Remove lemongrass and discard.
Add the chilli paste, fish sauce and sugar into the coconut milk and cook 2 mins/90o/speed 1.
Add the prawns and cook 1 min/100o/Reverse/speed 1.  Add the scallops and cook 1 min/100o/Reverse/speed 1.
Add the amount of cornflour slurry you need to get the thickness you want and cook 1 min/100o/Reverse/speed 1, adding the full quantity only if needed. I used the full amount and it was still a thin sauce.
Serve over steamed rice and sprinkle the remaining chopped coriander leaves.

My prawns were medium size and the scallops (without roe) were small, hence the shorter cooking time for them. You can add them at the same time as the prawns if they are large. You could add an extra handful of prawns/scallops if you so wish as there is enough liquid to cope with a few more in this recipe.

I used all prawns and as I prefer buying prawns in their shell and preparing them myself,  I bought just under 750g of whole prawns.  I'm going to buy 1kg next time as there's enough sauce.
I couldn't get any red chillies and mine aren't ready in the garden, so I used a long green one and deseeded only half of it.  Perfect heat for us; had bite without being too hot.
I used up 200ml of coconut cream that I had in the freezer instead of coconut milk.
I think my sauce is green because my spring onions were lovely today and so I used most of the green bits too.
Will be making this for my son in law when they next visit as I think he will really like it.  Thanks for a great conversion Judy, thoroughly enjoyed by us.

I would be in seventh heaven if they were in my freezer Robyn - I'm happy though to just have a 1kg packet to delve into occasionally.
