Maddy's Cookies & Cream cupcakes

Another friend asked how I make these, and I thought I should create a post of my version, without it getting lost in all the other sections.



Crush 1 packet of oreos in the TM until you have crumbs.  Set aside.  
Or you can have a minty version with mint slice biscuits.
Plus mini oreos for decorating

The cupcake batter:

1 vanilla version of I love Bimby's, Bimby chocolate cake.....love your recipe ILB  ;)
Omit the cocoa, and add 1 Tablespoon vanilla extract.
Pour batter into another jug for easier scooping.
Stir in 1/2 a cup of the crushed oreos, and keep the extra for sprinkling once decorated.
Scoop batter into cupcake papers, to 3/4 capacity.
Bake at 170c for 20-25 minutes (depending on your oven)

Icing

1  quantity of creamy vanilla frosting
Pipe on with a wilton 1M or 2D tip, swirling from the outside to the centre, then sprinkle with some reserved crushed oreos, and top with a mini oreo

Cooking time quoted for standard cupcake papers....allow extra time if using muffin sized papers....best to check from the 20 minute mark.....as we know how our ovens can vary  ;)
Cake quantity can be halved, as the bimby cake makes a large quantity.

Thanks, Maddy - I envy your talent in the kitchen - I'd love to have a go with these although I doubt I could make them look as wonderful as yours!  Really appreciate the concise instructions!! :D

Thanks for making this a separate thread Maddy, I made them today based on your comments in the cake thread. I removed half the mixture and added cocoa to the second half along with adding Oreos to both batches.

Yes, thanks Maddy. I made a batch of the ILB cupcakes with vanilla frosting yesterday. However, I still need lots of practice with frosting/icing as they don't look anywhere as lovely as yours  :( I also couldn't find the 1M tip in Perth. I phoned over 15 kitchenware shops in Perth and not one store had it in stock.

that's crazy!  it's one of the most used tips.  if no luck finding one, just use one of the large plastic star tips, that you can buy in the supermarket, in a pack of 3.
If all else fails, go online  ;)

I will start looking at supermarkets. I've had a look at ebay but I'm not keen as the tips cost $5 and then you have to pay another $7 for postage. The store where I got the others, not too far from where I live and I visit very regularly, sells tips for $3.99 each.

Cakes tins and things in balcatta have them but are $8.50
I bought a pack of 4 Wilton tips and disposable bags at spotlight and the 1m tip was included think it was about $28.00 from memory.
I child-proofed my house, but they still get in!

Thansk for all the tips and photos.

Maddy have you done the double swirl on yours or just a single? also your edges look more "fluttery" if that makes sense, is it the same tip as you use for the rose by swirling from in the inside out or have i got my numbers confused? I'm not sure which one I have now  ???
