TMX vs KA for bread making
« on: July 22, 2012, 07:06:43 am »
Has anyone used both for making bread?  How does the TMX kneading compare to a KA kneading?  Asking because a friend has a KA but never used a TMX and I've never used or seen a KA to tell her :)

Hoping someone here has used both :)

I don't have a KA but have a large kenwood chef.

I still use my kenwood more for bread as it takes double quantity, two loaves at once.

However I knead longer in Ken. I also use a system called autolyse which means I wait 15 mins at certains times.

I am still experimenting with the two, but one loaf versus 2 is a no brainier for me.
Or I make 3, one in  *: and two in ken.

Will do that this week and study the differences, will photograph proceedings and report back. Chookie and Andie are the bread gurus on here.

I haven't made bread in my KA, but I did make pasta for the first time in it the other day and have to say that it definately kneaded the pasta dough better than TMX, so I will be interested in the results DJ.

Interesting discussion.   I have large Kenwood like DJ but have never used it for bread making.  Have made bread by hand, in bread machine and now TMX.  Do think that the main difference may be in the amount of dough you can knead at one time.  Have found that the same recipe made by hand or kneaded in TMX,  come out the same.  The TMX is just so much easier .
Why don't I use the Kenwood.???   I like to make different breads,  so smaller quantities suit better.  Same recipe, I think the proofing might be more important.
Will be interested to hear what you find out.

I have a large Kenwood too, but it's in the cupboard. I have heaps of attachments for it. I prefer to make bread in the TMX, it is so much easier? I haven't used it for quite a few years and use a handbeater if I need a beater.

I've never used a KA, but I much prefer doing my doughs in my breadmaker over the tmx.  I just seems to have better rise and texture.  It's also easier as I don't need to worry about rising time etc

Hiya

I will get round to doing this, but not just now as too busy with harvest etc.
Maybe if we get bad weather again. Hope not though!  ;D

Hope that's ok?

Thanks Meagan. I have a KitchenAid and yes it is very good with dough work. We make a lot of cookies. The motor is incredible. My DH was originally from the US and grew up with KitchenAid appliances so had no reservations with spending $700 on the KA (now I know what KA is short for) for my birthday five years ago. Very happy mixer.
