Chit Chat / Thermomix Maintenance

Hi all

I few questions about maintenance. My handle is starting to loosen from the jug and my blades are dull. Any tips? I know I can blend ice to sharpen, but are there any actually blade sharpening services? What should I do about the handle? Has anyone else experienced this?

Hi all

I know so many of you are baking experts so I'm hoping you can help me out here. I've recently started supplying slices and baked goods to cafes (yay). I'm being very particular about costings but somehow my hedgehog slice costings were wrong. Its now very popular and I want to keep it but make some adjustments. I'm still making profit from it but not as much as I need to make it worthwhile.

I'm already getting the chocolate at a very good price, but clearly it's an expensive addition to the base. I can make my own condensed milk but when I factor in the labour, it's better for me just to buy it in cans. So, my current thoughts are the reduce the thickness of the slices slightly and also reduce the chocolate and add cocao powder mixed with something??

I'm kind of from Canberra, via many other places. Currently OS but I'm thinking about moving to Melbourne when I move back to Australia. Is there much of a face-to-face TM community in Melbourne?

Seems like a good way to meet people.

Have you ever read online discussions about TMs, but non-TM owners outside of this forum?

It's hilarious. There's been several occasions where people have referred the TM community as 'a bit culty' and 'it can't be trusted' because you can only by them directly of representatives, and that's when they try and 'suck you in'. Either that or they think we're all insane or rolling around in a big pile of money to spend such a large amount on an appliance.

It makes me chuckle when I read it, but in fairness, I am a bit obsessed.

Desserts / 'Strawberry Milkshake' Custard

Not even sure if this warrants it's own post because its so easy, but I made it today because I had some sauce left over. And it was super tasty. The flavours reminded me of strawberry milk that I had when I was a kid.

Name of Recipe: 'Strawberry Milkshake' Custard
Number of People:4
Ingredients:
1 qty of the EDC custard without vanilla or lemon zest
1/4 cup or to taste, homemade strawberry sauce (recipe below)

Preparation:
Add the strawberry sauce with the rest of the ingredients.

Name of recipe: Strawberry sauce or jam
Ingredients:
150g caster sugar
250g strawberries, halved
1 vanilla pod, or substitute with essence or paste
25g butter

Preparation
1. Place a frying pan over a medium-high heat. Once it is hot, add the caster sugar and leave it to melt. When it has turned a light golden colour, remove the pan from the heat.

2. Add the vanilla seeds and the strawberries or plums and swirl the mixture around until the fruit and sugar combine to give a jam-like consistency. Stir in the butter and leave to cool slightly.

Tips/Hints:
The sauce could probably be made in the themomix by heating the strawberries, vanilla and sugar on varoma until well combined and sugar is melted then mixing in butter with no heat. Experiment! The butter is a very nice creamy addition.

Hey everyone

Pretty sure my boyfriend is getting sick of me rabbiting on about this website I found today. So I'll tell you food nuts about instead.

Its called 'Plan to Eat' - http://www.plantoeat.com

It's a recipe storage site but is better than others i've come across in the past.

Its features are:
- automatically generates recipes from URLs (not from forums, but manual entry is very assisted)
- drag & drop monthly meal planning
- grocery list generator
- automatically categorises ingredients

I'm currently on a 30 day free trial. Pretty sure I'm going to sign up and pay the 35 USD per year.

LOVE IT!

(I always have billions of recipes bookmarked and saved all over the place - this solves my problems)

Hey everyone!

I've been missing my TM like crazy because its in storage for 2 years, BUT, I'm house sitting in france and to my luck the owner has a thermomix! So excited! The recipe book is in French so I'm translating using google but need a little help.

Does "1 gobelet 1/2 d'eau" mean 1.5 cups of water?

It translates as "1 cup half of water"

Pretty sure it does but it'd be nice to be sure before I start cooking....

Chit Chat / Learning how to cook when you literally can not cook

I made an interesting discovery the other day. I thought when people said "I don't know how to cook", they meant that they weren't very good at frying a steak or other basic things like that. I'm staying with a old friend of mine who has say that phrase to me a couple of times and I just thought she was disinterested in cooking — which is fair enough! She loves dancing and I struggle to see the point in it. We're all different!

I offered to cook for her during the week as a thanks for allowing me to stay. She just bought the a thermochef so she wanted me to help her learn how to use it. She wants to get healthy so she asked me to go grocery shopping to help find ingredients. Once we reached the supermarket it was then I realised WHY she was 'disinterested' in cooking. She doesn't know where to find ingredients or which vegetables are which. I helped her find leeks, eggplant, fresh herbs, bean shoots, zucchinis. I help her locate things like lentils, nuts, real parmesan cheese, Greek yoghurt.

We started cooking together and I found myself teaching her basic things like, how to peel a garlic clove, how to use a knife, how to use scales, how to juice lemons... you get my drift. I was very happy to help her learn because I truly believe that learning how to cooking is the key to unlocking a healthy life. They go hand in hand.

My dad can only make his "special spaghetti" and my mother is a pretty basic cook, but I didn't realise just how much my mum taught me growing up. I suppose I used to watch her cook, help out by peeling vegetables etc. Whilst my friend has no memory of her parents really cooking, she said everything came from a packet. They were busy people and it was the best solution for them at the time.

I don't think my friend is unusual, and I feel really lucky that I was taught those basic life skills which probably gave me an interest in cooking.

I really hope she continues to learn after I leave her house. I wanted to find a few really basic 'how to guides', so i found this:

But i want to find an 'ingredients' guide. Does anyone know of any? Something you can printout and take with you to the supermarket that tells you where things are kept and other basic info like that.

Has anyone else discovered just how hard it is for some people to enjoy cooking? It's like being told "Go sew your own clothes" when you have no idea about fabrics, sewing machines etc. It has to be the key reason why, in Australia at least, our society is getting so unhealthy. What do you think? Does it concern you?

Hey everyone.

All my cookbooks are in storage as I'm heading overseas for "however-long" in a few weeks. I'm already grieving that I won't be able to use my TM for possibly 2 years! What?! No!

Anyway, I still have my TM with me for the time being and while back I bought ingredients for her Mixed Bean Salad from her Changing Habits, Changing Lives COOKBOOK. Does anyone have this recipe that they could give me? It's not actually a TM recipe but I thought this would be the best place to ask.

Recipe Requests / I just bought a $50 black truffle! Help!

I don't even know why! Some people are addicted to buy shoes... I'm addicted to buying exotic, stupidly expensive ingredients. What's wrong with me? I'm trying to save for a holiday...

I haven't posted here for ages but I need to make something with it tonight! Anyone have any nice dinner recipes/ideas?
Doesn't have to be a Thermomix recipe either, anything will do!

P.S. We have chickens at the moment so I've made truffled eggs with my excessive amount of eggs. They're quite tasty.

Hey everyone,

It's been ages since I've posted. No real excuses, just haven't!

I have a question for consultants: Do home consultants for thermomix (and other similar businesses), advertise, make business cards, recipe cards ect?

Just doing some research and wondering if it's worth asking my friends who have friends working as consultants if they need any design services... (I'm saving for a well deserved holiday!)

I know that some of acquaintances here have consultant friends, do you think its worth my while trying to contact them or would it just annoy them? I'd be grateful for any feed back!

Chit Chat / I want your advice on what crepe pan to buy

Morning all,

I am in the market for a new crepe pan. You are all cooking experts, so I thought I would ask if anyone here would recommend one that they have used. I am willing to spend a bit, but I want to make sure that with the right treatment it would last a long time.

I make crepes once or twice a fortnight, and I am fed-up with my current pans. One is tiny, and the other is massive and heavy, and too deep.

Hey everyone,

I want to bake a birthday cake or even a nice dessert for a diabetic and I am having trouble find a good recipe that contains no artificial additives. I would love to make some sort of cake frosting too, but I can't seem to find anything.

Does anyone have any words of wisdom they can share with me? Any wholesome trusted recipes with no additives?

and I came across this:


MACADAMIA 'CHEESE'
1c macadamias
1T lemon juice
1T nutritional yeast
2T onion
½t salt

-Process all ingredients in a food processor until fluffy

I'm going to try adding to my pizzas, even though that defeats the purpose of it being raw.

Other variations are:

Pine Nut Cheese Spread

1/2 cup pine nuts
1/2 cup macadamias
2 teaspoons lemon juice
1/4 teaspoon salt
2 teaspoons nutritional yeast
1/4 cup water

Nut Cheese

2c macadamias
1c pine nuts
2 T lemon juice
2 T nutritional yeast
2 yellow peppers
2T fresh parsley
1T fresh thyme
1t salt
½c water as needed

Process all ingredients together adding as little of the water as possible until a fluffy consistency is achieved.

Chit Chat / Who else is scared of raw eggs?

I was curious if anyone else had a strong fear of even the slightest runniest egg, especially raw?

Up until perhaps six months ago, I ate them most mornings for breakfast in my smoothies. Until I was hit with Salmonella Food Poisioning. Its not confirmed that eggs were the cause... but it seemed like the most obvious cause.

Has anyone else had negative experiences with raw eggs?
