Cakes / Lemon, almond and raspberry muffins

I have just made this recipe up as as muffins

I followed the recipe exactly - mixing the oil, eggs, sugar and zest at speed 4 for a few seconds, then adding the lemon juice, almonds and flour at speed 4 for probably 30 seconds until combined.

I then threw in a punnet of fresh raspberries on reverse spoon speed until just combined

180 degrees about 15 minutes - really really good

Vegetarian / Pea, Feta and Basil Frittata

Pea, Feta and Basil Frittata:
Serves 4-6:
Ingredients:

- enough cooked peas to cover the base of the Varoma tray
- 6 eggs, beaten
- 150g feta cheese, crumbled
- 2 stalks of basil, finely shredded

Preparation:

- mix all the ingredients in a bowl. season with black pepper

- wet some greaseproof paper and use to line the Varoma tray

- pour in the egg mixture and cover with lid

- fill the bowl with 1 litre of boiling water, top with Varoma and steam for 15-25 mins, Varoma temp, Speed 2

- start checking the frittata to see if it's cooked after 15 mins. Mine took a full 25 mins but my eggs were on the large side


This is one of our favourite meals - lovely with salad and delicious cold the next day

Seafood and Fish / Brunette's fish pie

This is my first recipe post - so hopefully, I'll get everything right

Fish Pie - serves 2 hungry people or 3 not so hungry people

Step 1

- grate 100g mature cheddar cheese- speed 7, 5 seconds - set aside

Step 2

-  chop 1 small onion; 1 small carrot; 1 small leek - speed 4, 10-20 seconds

Step 3

- scrape down bowl, add 20g olive oil, cook - 4mins, 100 degrees, speed 1 :-:

Step 4

- weigh 200g creme fraiche (I used low fat) straight into the TMX, cook - 2.5mins, 100 degrees,  ^^ :-:

Step 5


- through the hole in the lid add: the juice of half a lemon; the grated cheese; 1 teapoon of dijon mustard; 1 tablespoon of chopped chives, cook - 1 min, 70 degrees,  ^^ :-:

Step 6

- add 350g diced mixed fish (I used salmon, pollack and smoked haddock but you can use anything you like) to the sauce in the TMX bowl, season with salt and pepper, mix - 15 seconds,  :-: ^^

Step 7


- tip fish and sauce into a buttered ovenproof dish - set aside

Step 8

- top fish with mashed potato. Bake at 200degrees C for 30 mins

Introduce Yourself / Hello from London!

hello everyone

I've been impatiently waiting for my account to be approved so i could log in and say hello to you all.

I seem to be one of your few members in the UK - not much seems to be known about TMXs here but I have Italian heritage (both parents) so  know all about them. I have yet to have a demo and got my machine direct. Are there any other UK members?

I am a new TMX owner and have had my TMX for 4 days. So far I have made a tomato sauce (for pasta), a cheese sauce and steamed veggies (in the Varoma), the steamed garlic rice, and some pineapple sorbet.

I have lots of questions - esp re chopping vegetables - is it possible to get a 'dice' sort of chop - I keep turning mine to mush! Also I'd like to try and grate carrots and courgettes (zucchini) and not having much luck with that either!

can't wait to get involved with you all!
