Cakes / Baked Doughnut
« on: September 12, 2011, 07:22:51 pm »
I thought l'd kick off some healthier eating on my part by baking some doughnuts  ;)  Well, they aren't fried anyway!

170g flour
1 teaspoon baking powder
75g superfine sugar (l used ground up raw sugar)
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
2 tablespoons unsalted butter
65g milk
75g plain yoghurt
1 teaspoon vanilla extract
1 egg

Preheat oven to 180 degrees.

Mix flour, baking powder, sugar, nutmeg and salt together for approx. 25 seconds at speed 6.
Add butter and mix 20 seconds at speed 5-6.
Put in whisk and add milk, yoghurt, vanilla and egg.  Whisk for 20 seconds at speed 3 (l scraped down the sides half way through).

Use piping bag or spoon to put mixture into doughnut tray, until about 3/4 full.  Bake in oven until golden brown and spring back when touched (around 10 minutes).  Let cool slightly, remove from tray and cover with favourite glaze.

Molly - Oh my goodness! Okay.  They're NOT fried doughnuts.  And I am quite partial to fried doughnuts. BUT!!!!!  They are delumptious!!!!  The kids are lining up for more....  they're only coated in fine sugar (had to brush with butter to make it stick) and mine have cinnamon as well.  Shhhh,  don't tell 'em!!   Oh,  and I didn't have any yogurt,  so I used Ricotta cheese.  I've converted it to Failsafe diet... and put it on my blog.  Smiley  Thank you!!!!!

Denzelmum -
Made half in my mini donut maker and half in the oven.  We enjoyed the one from mini donut maker without any topping, yum! Don't have donut tray, just used my muffin top pan. Different way to finish and turn out very different.  With electric donut maker taste more like donut, nice plain... while with muffin top, well it's more like muffin top.  Great option for lunch box.

Anyone got any favourite recipes for duck eggs?  My friends ducks are on a laying frenzy and l have an abundance of them.

Chit Chat / home made mozzarella
« on: June 15, 2011, 04:13:59 pm »
Has anyone tried making their own mozzarella in thermie?  Am on a cheese making binge and a recipe l have for mozzarella seems convertible to thermie for the most part.

Recipe Book Recipe Reviews / Cashew spread

Tried the cashew spread from the vegetarian book today.  Just waiting for it to cool and hoping it tastes better then!  I'm not a salt fan so maybe that's the issue, but l have to really concentrate to get any kind of cashew aftertaste.  Can see how this would be a yummy alternative to white sauce for lasagne - but if l try again l will decrease the salt to just a pinch and maybe add a few extra cashews.  2/5 for me.  Has anyone else tried this with nicer results?

Recipe Book Recipe Reviews / Cyndi's Pad Thai noodles

Well l guess it had to happen.  A recipe l just don't like.  The chicken tasted yum and l liked the different textures of bean sprouts, nuts, noodles and chicken, but .......  If l ever get the urge to try it again, l would probably halve the noodles and egg, add more bean sprouts and add a little something else to kick up the flavour (although the lack of flavour may have been because l didn't have any chives to put in).  1.5 out of 5.

Yum, yum, yum, yum - man oh man, love the recipes in this book.  My tastebuds chuck a party each time l try something new. 5 out of 5 for this one.

Recipe Book Recipe Reviews / Cyndi's yellow split pea soup

So quick, tasty, cheap and delicious - l love making and eating this soup.  The minty yoghurt topping is the perfect addition.  And once again, l used to avoid all things even resembling dried peas!  5 out of 5!

I have been trying to follow Cyndi's 21 day challenge and have shocked myself by how much l love the recipes.  The yummy frittatas are a big, big favourite, which is funny as before this recipe l have never been able to stomach sweet potato.  A definite 4.5 out of 5 from me.

Bread / Chicken buns

I made these today but need to play a little with the recipe l think.

I cooked the chicken first, then wrapped in dough and put in the oven.  Has anyone else tried this?  Would hate to be reinventing the wheel.

Recipe Book Recipe Reviews / peanut butter
« on: January 19, 2010, 12:30:55 pm »
Just made peanut butter for the very first time (from the EDC) and will never be buying the fake stuff again.  It just tastes delicious - going to have to make some more bread so l can slather it on!

I assume you would just have to substitute different nuts for different types of butter?

Introduce Yourself / Hello all

Just thought l would say hi to all of you lucky people who have their TMX.  I am still awaiting mine, which apparently has been delayed in the postie strike.  I have been scouring this forum for the last week and absolutely chomping at the bit to start trying some of the recipes.  There are so many that l want to try and l know l will enjoy using my TMX (name to be decided once we have met!) so much more with all of the work everyone has put into tweaking recipes, that l figured it would just be plain rude not to say hi!
