KERRIE FARM CHICKEN COATING

There are 4 steps:

1.    Soak the chicken in the Buttermilk Mix
2.    Make a Spice Mix
3.    Make a Flour Mix
4.    Cook in pan on stove top for breast OR in pan for short time and then in the oven for the pieces.


The Spice Mix list looks extensive, but it makes enough for several
coatings, keep in an air tight container.  All measurements are in
Australian tablespoons - 20g or 2/3 oz.

The Spice Mix could also be used for pork or seafood. A further possibility
is that it can be shallow fried or shallow fried and finished off in the
oven. An advantage is using the buttermilk which is a by-product from making
butter.  The spices used, I experimented with to get a mix that I liked.
Feel free to experiment.  To make it spicier you could reduce the ratio of
flour mix to spice mix.

Can make a nice gift for a friend giving them a packet of the Spice Mix and
a packet of the Flour Mix.


CHICKEN:
Use skinless chicken breast sliced into flat slices about 1cm thick; or  
Pieces with skin and bones in; or    
A whole chicken cut into 8 pieces.
Skinless chicken can be used but will be a little dryer.


BUTTERMILK MIX:

1 1/4 - 1 1/2 cups Buttermilk
1/2 tablespoon of salt
1 teaspoon black pepper
pinch of Cayenne pepper
1 teaspoon of garlic powder
1 teaspoon of paprika

1.  Mix Buttermilk and other above spices ingredients in a bowl.
2.  Pour this mixture over the chicken and place in the fridge for from 1
hour to overnight.


SPICE MIX:

1 tablespoon white pepper
3 tablespoons black peppercorns
2 tablespoons salt
1 tablespoon dried Greek Oregano
1/2 tablespoon cumin
1/2 tablespoon cardamom
1/2 tablespoon cloves
1/2 tablespoon nutmeg
1/2 tablespoon pepper flakes
1/2 tablespoon paprika
1/2 tablespoon garlic powder
1/2 tablespoon Allspice
1/2 tablespoon celery seeds


1.  Place all in the TM bowl and process on speed 7/8/9 until a fine powder.

2.  Add Spice Mix to the flour coating mix for the chicken, see below:


FLOUR MIX:

2 cups of plain flour
2 rounded tablespoons of Spice Mix
2 tablespoon of buttermilk.
1 tablespoon of Baking powder

Mix together with fingers until small lumps form, smaller than a pea.  You
may need to add more buttermilk.


COATING & COOKING CHICKEN

Boned pieces:
Drain chicken leaving some buttermilk on.  Dip chicken pieces into lumpy
flour mix and shallow fry in oil (I used rice bran oil) over medium heat,
until lightly brown and place in oven to finish cooking. 15 to 20 minutes at
175c.
Or
Skinless breasts:
Drain chicken leaving some buttermilk on.  Dip breast pieces into lumpy
flour mix and shallow fry until golden, turn and cook other side.

JD - Oh Chookie, this is so delicious. Bit of trouble to go to but at least we have our spice mix ready for a few more coatings. Exchanged the celery seeds with parsley as I couldn't find them and couldn't find my allspice. Used a mixture of oil and butter for frying and from 1 huge chicken fillet (500g) I got enough to serve 5 people.

MJ - it was fantastic! I used a packet and a half of chicken pieces - marylands, wing & breast pieces together etc. I didn't notice the pepper flakes in the recipe, so didn't use them! It was fine without them. The only thing I didn't have was nutmeg. I couldn't find it anywhere!! I didn't have any buttermilk, so used plain yoghurt. Also, there's no need to make a batter, just plonk the coated chicken into the flour mixture. I use a large baking dish to shallow fry and only had to cook two lots of chicken pieces. They were very much appreciated by DH, DS and a drop in. Thanks for a great recipe Chookie!!

Chelsea - This coating is fantastic Chookie - very authentic (aside from the lack of oil and grease).  My Hubby said to say a huge big thanks!!! I used chicken breasts (sliced in half to make them nice and thin) and rolled them in natural yoghurt and then straight into the lumpy flour mix.  They were coated beautifully.  I cut some into smaller pieces for the boys (large nugget size) but they were a pain to fry.  Next time I will just stick to large pieces. 10/10 -  YUMMMMMMMY!!!!!

You can substitute spelt flour for plain wheat flour.  When baking with spelt flour you just need to be aware that it behaves a little differently to wheat.  You need to either reduce the amount of liquid in the recipe by about 20% or add 20% extra flour to get the best results with spelt.

VHJ - This is absolutely delicious Chookie. We all loved it and will be making it again soon. Next time I will reduce the amount of the flour mix as I have lots left over & as it's had raw chicken in it will have to throw out the leftovers. If I'd been using my brain I would have put some aside before coating the chicken & just added extra as I needed it. I will also cook it on a rack in the oven to prevent the underside going soggy.  Oh well- live & learn. Thanks for a great recipe Chookie.
Next time I split the buttermilk mix in two and added chilli flakes to one for a " hot & spicy" version for me. Yummo. Tasted fantastic hot and was just as nice cold according to DH.

JD - Did this one with maryland pieces cut at the joint - more messing around than the thin pieces of chicken breast but equally as nice.   I did skin the.  I double dipped one but in the end I couldn't tell which one it was!.  I forgot to cook them on a rack like VHJ suggested but they were fine.

CC - Really wonderful Chookie, thumbs up from this household. Used VHJ's idea of placing on a rack when in the oven and that really kept it crispy.

Mllipede - YUMMO! We love KFC  and this is great, very similar but nicer somehow. I like to think its because the chicken is fresher, spices are freshly ground and there isn't so much grease so you really get to taste the flavours. My only criticism is that the chicken pieces were too large and there wasn't enough fried batter to gobble down. So next time I've promised the kids I will cut the chicken breast up into really small bits and do KFC popcorn chicken.

Update -  made "chicken popcorn" using the batter mix. Basically cut up chicken breast into walnut sized pieces and proceeded as per recipe. Was nice. For those that love the batter I recommend this way. It only takes a a few minutes to fry the popcorn so the chicken stays really moist too.

MJ - My family just adored this! Next time though, I'm going to do it in the oven. It was just too messy frying it on the stove for the amount that I did - 10 large pieces!

O2K -  I sprayed the coated chicken (with olive oil) on both sides and then put it on my roasting rack in my roasting dish.  I found that I had to spray it again about half way through (when I turned the pieces) because it was looking slightly dryish. However, once I ate it, it probably didn't need it.  The chicken was still deliciously moist (because of the buttermilk I presume).  It was really just for looks that I sprayed it again - gave it a more "fried" look.

johnro - I have only recently decided to try this oh so delicious coating. Thank you for the time you have taken in developing the perfect mix.

Nay-nay - Does my family love me tonight!!?? But they Love, Love, LOVE you achookwoman - they say, "THANK-YOU VERY MUCH!!" I did knock that black pepper back to 1 tbsp. I baked mine but I did spray olive oil over them.  My chicken was fairly large so pieces were big (they fitted on 2 trays) - I put the oven up to 220oC for the first 20 mins to crisp skin and coating then just baked for another 30-40 mins in 180oC. Served with mashed potato and gravy with coleslaw and corn cobs - it was pretty delish! My gravy was just mixed up in bowl that still had remnants of mixing spices with 1 tbsp of veg stock, 1 cup or so of water, heaped tbsp of cornflour and chicken pan juices. 5 mins/100o/speed 3.  

maddy - I did start to fry the first 3 largest pieces but the coating seemed to dissipate so for the rest I just sprayed them and popped in the oven. I also sprayed the rack with non stick spray and lined the roasting tray with grease proof paper......even less mess.  YUMMY Chookie!  Enjoyed by all! I only used 1 Tbsp peppercorns in spice mix to see how the kids handled it.  All good, so I'll increase it to 2 Tbsp next time and see how we go.

JulieO - Chookie, I made your KFC chicken last night.  As there were 3 of us I used 3 chicken breast fillets cut in half horizontally, so had 6 thin fillets.  I sprayed them and baked in the oven.  When they were cooked, the coating hadn’t browned up, looked quite insipid so I heated a little oil in a non-stick frypan and quickly fried them off on each side, less than a minute for each one and they got that lovely golden colour and really crisped up well.  I think using pieces in the oven and the extra cooking time that would take would allow them to turn golden and crisp up but as the halved breasts don’t take long to cook, I think cooking in just a little oil will work better.  I also think next time I will do the coating bit about half an hour before cooking so I can put them in the fridge for that time, that usually helps coating stick to the food better when frying. We really enjoyed them and I will def make again using the breasts as we aren’t big fans of pieces. They were so tender and we loved the flavour.  I only made a half quantity of the flour mixture and it was enough for coating 6 fillets.

Wonder - I made these with 1kg fillets chopped into relatively small pieces (approx 6 per fillet) which we deep fried for approximately 4-5 mins each and they came out lovely. We had a enough for 4 adults and 4 kids with chips and a couple of salads. Unfortunately while everyone thought it tasted great they didn't think it tasted like KFC. To me it tasted like I may have ended up with too much pepper in the mix.

berringamababe - Yummy, DD loved the KFC. DH found it was more like the hot and spicy one so will tame down the pepper next time.
I used the whey from my yogurt in place of buttermilk. Made a popcorn version too: Put 500g chick thigh fillets in TM for 30 seconds speed 4. Added I egg, 1 tsp spice mix and 20g flour speed 4 /30 seconds. dipped little pieces in buttermilk mixture rolled in flour mix then re-dipped in buttermilk mix then re-dipped in flour mix. I baked them in oven 180oC for 10 min then 5 min on 250oC as I don't like to fry sprayed with olive oil. 10 min's into cooking I turned the pieces.

cookie - the spice mix is nice on potato wedges.

MJ - Last time I made these I use Chicken Tenderloins. I soaked in yoghurt and some of spice mix overnight, then coated in flour/spice mix and put in the freezer. They didn't freeze, just set the coating. I found not a skerrick of the coating came off in the fry pan when I shallow fried. They were wonderful, cooked extra quickly and were delicious cold the next day.

sue h - This was a huge hit in my family. I had to play a little with the spices as I didn't have them all. I used my trusty 'Food Substitute Bible' and came up with something that would be pretty to close to your recipe. I made it once and my DS9 said he wanted it for his party 2 days later. It was a huge hit there as well. Needless to say all the kids loved it and the parents kept coming back for more. This will on our picnic and party menu in the future. I also love the idea of putting the spice in gift hampers.

Chookie - I have been mixing some of this spice mix with a little flour and using it to dust fish before grilling.   Also made some chicken patties and coated them.  Good hot or cold.

KerrynN - Well, what a hit! DH was over the moon, kids were rapt and so was I. As others have said, the only thing missing is the fat and grease. I used maryland pieces and baked in the oven with olive oil spray. Will definitely be giving some of this spice mix to friends, and kids already asking me to make "popcorn" chicken. Thanks very much!

Hally - My mouth is on FIRE, just used the kfc rub with flour egg and some breadcrumbs, thought they would do for afternoon tea. They are HOT HOT HOT. Goodness and kids eat this. You guys must all have cast iron mouths!!! I am hopping around, off to school now with large water bottle.
Update 1 - Think maybe i should have used a load more breadcrumbs & less rub. I used 2 spoons of breadcrumbs and about 6 of rub, just seen chookies breakdown, no wonder I was on fire.... Mouth only just recovered!!! LOL
Update 2 - Wow, I am in heaven,  these are just so FABULOUS. JUST YUM YUM YUM

belfie - Ok I tried it with the following:
normal milk (didn't read the lemon juice comment till too late!)
Instead of the wheat flour: 200g orgran crispy corn crumb, 150g arrowroot flour, 150g rice flour (made in TM with basmati rice), and I also threw in a tsp of xantham gum for good measure.
Popped it all in the fridge for half an hour or so before cooking, then shallow fried in olive oil.
It was AWESOME!   That flavour is just yum yum YUM! The coating was yummy & crispy (possibly not as chunky without the buttermilk) but still delicious. It was devoured by all, DH declared it didn't taste "GF", fussy Mr 3 yo gobbled it down, and Miss 1 inhaled her portion & looked for more.  Shall try with soy milk next time as don't want to push DH's dairy tolerance.  If I could find soy cream am wondering if that might work too. Thank you so much achookwoman!
Update - I tried it with soy milk and it tasted great. Plus I pared back the GF flours, just using 150g orgran corn crumb and 100g arrowroot flour (left out the xantham gum - that was just a crazy moment I think). and it was delicious once again.  I will add that I think it could be made without the garlic powder if a FM'er was particularly sensitive.

AB - well Chookie it is a great recipe, I made mine with cardamon seeds and fresh nutmeg, they were very strong and I think I was a little heavy handed with the chilly pepper flakes, it was hot and spicy but very yummy.

courton - made the chicken tonight. The marinade made it very tasty but after rolling the first few pieces of chicken in this flour-spice mix, it became gluggy and would not stick to the chicken pieces.

Lisel - wow!  I cut my chicken into nuggets and used natural yoghurt instead of  buttermilk.  I think I was a little heavy handed with the cayenne, the kids were not keen on the first batch but after I scraped the yoghurt mix off their pieces they were fine. I gave them a quick spray of olive oil and cooked them on a rack in the oven for 15 mins.  Perfect.

dede -  I think I have made this about 4 or 5 times in the last 16 months. We all love it. So yummy. I add a little extra buttermilk to the coating mixture to make it a little lumpier so when it cooks there are more crunchy bits.  A great recipe that I will be making for years to come.

Obbie - Yummy, kids love it.

Brumington - Achookwoman, you are quite simply a genius. You are also my DH and two DS' s new hero. This is NICER than the original. I changed nothing apart from using milk in the flour cause I had run out of buttermilk. The best meal we have made with the Thermomix so far. This will be a firm family favourite.

Jamberie - We had this for the first time yesterday and I totally agree with Brumington! This is fabulous! I can't wait to invite my dietitian sister over for some KFC next week ;D

Amy - My first time making this. It worked pretty well but I found a lot of my coating fell off. Really good recipe though, very flavoursome. Thanks Chookie.

jeninwa - I meant to comment during the week chookie made this for dinner using the sample from you,  DH loved it, had trouble with the coating falling off some pieces, the chicken breast were so tender, will be making this again.

tarasis - Made with some whole spices (cloves) and it worked well. Though some pieces were overcooked as pan got too hot (may try oven next time). First batch of 4 had a perfect colour.  I loved it and it does leave a lingering tingle in the mouth similar to our KFC though a touch "hotter".

ES - I made this with free range chicken chops on the bone. I sprayed them with oil and cooked on the BBQ. They were delicious but the spice mix was a little too spicy for DS. However, DD loved it and asked me to make them again soon.

snappy - I made some KFC chicken for dinner last night (minus the cayenne pepper) and it was loved by all.

Cuddle cook - It was delicious - thank you. We used skinless breast strips and deep fried them, and used 2 tbsp spice mix to 1.5 cups flour - just perfect for us but removed the coating for the little one. Not much of an excuse to get takeaway from this particular establishment again. Served it with coleslaw, mash and some of Jaime's get ahead gravy I had in the freezer.

jakodai - I love it, always do... DS's dad said he liked it, too. I just need to work out how to pan fry the chicken breasts properly. I've never been a fryer, so I need to practice.

Debbiebillg - The kids think it tastes more like KFC the next day lol. They all gobbled it up last night and loved it. They had leftovers for lunch at school today in a wrap with lettuce and cheese and all gone in their lunchbox too (which is rare). DH loved it also. I put the chicken and the flour mix in the snaplock bag and tossed it around, let it sit for a few mins then fry.

Brumington - I just love this recipe.

BZB - Chookie, the taste was amazing! My 3 boys loved it. Cooked it in the air fryer.

I also have an aversion to deep frying Cookie - it just goes against the grain somehow. 
I do like the sound of this recipe Chookie - KFC used to be my DH's treat once a year but then their standards seemed to drop somewhat and it no longer appealed to him.  I'd like to try this and see his reaction. Some spices to get to complete the list of ingredients first though.

Cookie and JD,  the funny thing about this recipe is that it tastes less oily than the previous recipe which was sprayed with oil and baked in the oven.   We ate it with mashed pots. and cold slaw.  DH had a sandwich of leftovers.  Grain bread, mayo and lettuce from the garden.  I heated the chicken in the Microwave.  He said it was delicious.  When the recipe was developed by 'Cook's Illustrated",  their aim was to drastically reduce the fat content,  but keep the flavor and moistness.  I think they succeeded but the original recipe they developed wasn't spicy enough.   What I did to get the flavor right,  was to take a small sample of the coating mix and cook it in the oil,  and the adjusted the spices to my liking.   Judy , you could use what you have and see what you think,  without buying more spices,

I like the idea of shallow frying.  Would you believe I am scared of deep frying?
Long ago I had an oil pan fire, very very scary.Thank goodness my DH was there, as I froze on the spot.He smothered the flames with a wet towel, I was left with a very messy kitchen to clean and ceiling to paint.

Parsley flakes ground up give a "similar" flavour - just blitz them first so you don't have toooooo much green

Ceee, I used just a sprinkle of dried chilli flakes but we can also get dried capsicum (peppers) flakes as well. As Chookie says just use what you have got.

Ceee, the chilli flakes are dried hot chillies cut into flakes with the seeds.   You could sub.  with chilli powder,  use the about 1/2 quantity or to taste.

Judy,  have made this again today,  and tried to follow my own instructions.   They are most confused and i take my hat off to you for working them out.   That said,  I think the mix is great and instructions might say 'add a little extra for Hot and spicy'. ;D

 :D :D :D That's very funny Chookie.  I must admit I had to read it several times and highlight the bits I needed to follow.  I only used a little bit of dried chilli and could feel the sensation on my lips for hours afterwards so I definitely wouldn't be wanting 'hot and spicy KFC'.

Chookie, we all had problems starting off writing recipes for the TM - it is fun to look back at our early attempts & wonder how anybody followed our instructions.

I think I need to clarify what the KFC stands for .......Kerrie  (near where we live),  Farmed,  Chicken,  and coating of course .   :-)) :-)) :-)) :-)) :-)).  I hope no one thought it was any thing else.

Spelt will work just as well! I often sub out some plain wheaten flour for spelt in my cooking.

Ah!  This is why my spelt banana cake turned out to be banana pudding instead (although it was still yummy with a bit of cream).  Thank you very much, I'll factor that into future recipes!

I find I can sub out about 30% of the wheat from a cake recipe for spelt and it doesn't make a difference to the consistency of the cake.

With the KFC mix, I'd just coat the moistened chicken pieces with the dry spelt/spice mix, rather than make a lumpy batter. If you want a heavier coating, you can re-dip the floured pieces in the remaining buttermilk/yoghurt that it was marinating in and re-coat in the flour/spice mix.

This is absolutely delicious Chookie. We all loved it and will be making it again soon. Next time I will reduce the amount of the flour mix as I have lots left over & as it's had raw chicken in it will have to throw out the leftovers. If I'd been using my brain I would have put some aside before coating the chicken & just added extra as I needed it. I will also cook it on a rack in the oven to prevent the underside going soggy.  Oh well- live & learn.

VHJ,  glad you liked it.  Rack in oven is a great idea.   On the way home from Melb. today stopped off and bought 1 piece of KFC,  just to taste the coating again ,  to see if it needed tweaking ;D ;D ;D  Was amazed at how fatty it was. Can't say I enjoyed it all that much.   What I did notice was a predominance of salt and pepper,  with a little 'herbs and spices'.  Think mine is OK but adjust to your liking.

I used skinless breast strips and they were moist,  JD and CC.  Bones in OK but I can do without the skin although this is what the original has.  Double dipping might make it too thick,  but worth a try.

Did this one with maryland pieces cut at the joint - more messing around than the thin pieces of chicken breast but equally as nice and as DH loves sucking on bones, he was happy with them.  I did skin them and as you can see from the photo, you would never know.  I double dipped one but in the end I couldn't tell which one it was!.  I forgot to cook them on a rack like VHJ suggested but they were fine.

I made these again the other day as we all loved them the first time. I split the buttermilk mix in two and added chilli flakes to one for a " hot & spicy"  ;) for me. Yummo. Tasted fantastic hot and was just as nice cold according to DH.

CC, glad you liked them.   I also placed them on a rack,  as VHJ suggested.  Remained crunchy all over.  I mentioned in another post that the Lebanese shop where I buy my spices has a prepared mix and it is full of flavor enhancers and preservatives.  They are interested in trying some of my mix, so I have packaged up some for them,  with instructions.  Will be interested to hear what they think.

Gosh my boys love these Chookie. I had some diced chicken ready to create a "masterpiece" with when DS2 asked if we could have KFC nuggets. The idea worked for me - had to substitute homemade yoghurt for the buttermilk as I'd used that in the bread but they turned out really well. I even sneaked a bit of chilli in for everyone  ;)
When the Lebanese shop owners start marketing your mix and you become more famous than now, I will be able to say "my family well and truly tested the initial product  ;D ;D

CC,  there is quite a story behind the 'naming' of the 'mix'.   When I first made it, JD's DH suggested that I change the name, for legal reasons, or that KFC should stand for something quite different ,  and that I should make it known.   I had worked quite hard to get the taste right.  Even stopped of at a KFC shop on the way home from the city and bought 2 pieces so I could compare.  Until then I was doing it from memory.  Although I was after the flavor,  I was surprised at how greasy it was.   
After JD's DH's wise words,  we had some visitors for tea and I mentioned it to them.  Now this company was academically quite outstanding,  so I thought I would get some good help. ( 2 PHD's and an M Sc. ).They tossed the idea around for some time.  However nothing that I thought suitable.  So DH and I were having lunch and discussing the matter when I realized that the 'village' next to where we live is called Kerrie,  and with some stretch of the imagination,  you could call our property a Farm. So Kerrie Farm Chicken coating.  With your suggestion,  I could adapt the name to something like Kerrie Farm Chookie's coating.  I am open to any suggestions.

Just thought I could donate a book,  how about a Sally Wise one to the successful person. Winner can select which Sally Wise book.

Rules....Must have KFC in that order.   Final date for closing of suggestions 15th. December.2010. This will give me a chance to post the book before Xmas.

Should I consult to see if this is OK.?

I tried this tonight. YUMMO! We love KFC (its a secret guilty pleasure  8)) and this is great, very similar but nicer somehow  ;D I like to think its beacuse the chicken is fresher, spices are freshly ground and there isnt so much grease so you really get to taste the flavours. My only criticism is that the chicken pieces were too large and there wasnt enough fried batter to gobble down  :D

So next time  I've promised the kids I will cut the chicken breast up into really small bits and do KFC popcorn chicken  8)

We were also mucking about thinking of names....

MFC... mummy fried chicken (kids liked that one) or "finger lickin' good chicken"

I made "chicken popcorn" last night using the batter mix. Basically cut up chicken breast into walnut sized pieces and proceeded as per recipe. Was nice. For those that love the batter I recomend this way. It only takes a a few minutes to fry the popcorn so the chicken stays really moist too.  ;D

More spicy they could reduce the ratio of flour to mix..  In the original instructions from the test kitchen, they suggested finishing off in the oven.  This is probably most suited to large amounts.

I have a few friends who wanted to try the mix but no TMX, so I have put together some simple instructions.  I will post them today as Forum members, who wish to give the mix as Xmas presses can include the instructions in the pack.

jo.  I would spray well with rice bran oil, place top down on a wire rack and then spray the other side.  I would turn 1/2 way through cooking.   I think this would work.

I actually did this the other night.  I sprayed the coated chicken (with olive oil in my case) on both sides and then put it on my roasting rack in my roasting dish.  I found that I had to spray it again about half way through (when I turned the pieces) because it was looking slightly dryish.

However, once I ate it, it probably didn't need it.  The chicken was still deliciously moist (because of the buttermilk I presume).  It was really just for looks that I sprayed it again - gave it a more "fried" look.

DH was very impressed - I don't think we'll be needing to go to KFC anymore to satisfy his need for KFC!

@ zan - I did bake NOT fry mine but I did spray olive oil over them. Yes it is potato and gravy (in the baby Thermoserver) with coleslaw and corn cobs - it was pretty delish!
@ JD I must of missed that thread  - Thanks will have to try it. My gravy was just mixed up in bowl that still had remnants of mixing spices with 1tbsp of veg stock, 1 cup or so of water, heaped tbsp of cornflour and chicken pan juices. 100oC, sp2 5min.  ;)

My DH took some leftover KFC to work the other day and patiently listened while 'a fool' spoke to him about the bad things that happen if you buy and eat deep fried chicken. When he had finished DH calmly informed him that it was another thing I had made on my $2000 machine that he continually ridicules.I had baked it in the oven with EVOO spray on it. When I send goodies it has to be done when this person is at meetings. (hee hee)

I did knock that black pepper back to 1 tbsp as I have an annoying 9yr old who spies out any pepper in any dish I make and then complains. She did happily eat this though.  ;)

I will do the shallow fry, then the oven bake.......but was wondering for future.....how long would I bake chicken pieces (bone in) if I do it fully in the oven?

My chicken was fairly large so pieces were big (they fitted on 2 trays) - i put the oven up to 220oC for the first 20mins to crisp skin and coating then just baked for another 30-40 mins in 180oC. Didn't need to fry at all but did spray with olive oil.  :)

I did start to fry the first 3 largest pieces, but the coating seemed to dissipate  :-\ so for the rest I did just spray them and pop in the oven.
It's cooking now, and it smells so good!

Will report back with a snap when done  ;)

I did only use 1 Tbsp peppercorns in spice mix, to see how the kids handled it.  All good, so I'll increase it to 2 Tbsp next time, and see how we go.

Chookie, I made your KFC chicken last night.  As there were 3 of us I used 3 chicken breast fillets cut in half horizontally, so had 6 thin fillets.  I sprayed them and baked in the oven.  When they were cooked, the coating hadn’t browned up, looked quite insipid so I heated a little oil in a non-stick frypan and quickly fried them off on each side, less than a minute for each one and they got that lovely golden colour and really crisped up well.  I think using pieces in the oven and the extra cooking time that would take would allow them to turn golden and crispen up, but as the halved breasts don’t take long to cook, I think cooking in just a little oil will work better.  I also think next time I will do the coating bit about half an hour before cooking so I can put them in the fridge for that time, that usually helps coating stick to the food better when frying.

We really enjoyed them and I will def make again using the breasts as we aren’t big fans of pieces. They were so tender and we loved the flavour.  I only made a half quantity of the flour mixture and it was enough for coating 6 fillets.

I served them with salad and oven roasted chips; potatoes peeled and cut into chips, tossed in a little flour and the smallest amount of oil, then laid out on a baking tray, sprinkled with sea salt flakes and roasted for about an hour. (from the Free Range Cook book), they went so well with the chicken.

Sorry no photos, as I was a bit behind having to fry off the fillets at the end, I didn't want the chips to become cold.   :)

JulieO,  thanks for that comprehensive report.   I use chicken breast fillets, no bone,  and slice them into about 3 flat pieces, (like you did).  I cooked them over a fairly high heat in about 1cm. of rice bran oil and they browned quickly,  then I put them in the oven.   Mostly I wanted to see if any oil dripped out.   Very little did and they were not at all greasy.  In fact they were nice cold the next day.  I will be interested to hear how you go with putting them in the fridge for a while before you cook them.  Did some of the coating come off? 
I haven't had this problem.  Let me know and I will do more testing.   Thanks again for the report as I am sure it will help others.

I made these over the weekend with 1kg fillets chopped into relatively small pieces (approx 6 per fillet) which we deep fryed for approximately 4-5mins each and they came out lovely. We had a enough for 4 adults and 4 kids with chips and a couple of salads. Unfortunately while everyone thought it tasted great they didn't think it tasted like KFC :-[ to me it tasted like I may have ended up with too much pepper in the mix.

Chookie, I was just a bit worried that the coating might come off when frying as some have said it was quite messy.  Will report back next time I make it, but I'm not complaining at all, we really enjoyed this chicken, plus like Judy I like to get everything organised and then clean up ready to do the actual cooking.   :)

Wonder,  thanks for the feed back.   This is interesting about the pepper.   Before I put the final touches to the recipe,  I went and bought 2 pieces of KFC.  I had been working on 20 year old memory!!!!.   The overpowering taste was pepper.   I thought I may have over done the 'secret herbs and spices'.  2 other things 'impressed' me,  1, how greasy it was,  and how expensive.  Change the recipe to suit your taste and enjoy it.

We haven't had the real stuff for years, was put off about 5 years ago when I was violently ill over night after having some and I couldn't stand the smell or the sight of it for a long time, but I do remember how greasy it was.

I think your version is a very good one even if I can't remember exactly how the original tastes, thankyou for sharing it with us.  ;D

I'm experimenting with the method of this a little today. I used to make Fried Chicken years ago when the kids were all at home. I remember deciding to poach the chicken pieces first, then coat them when they're cold. I made gravy from the poaching liquid.

So, I figured I could steam them in the Varoma.

I've placed the dry ingredients from the marinade in a bowl and mixed this into the chicken pieces. I then placed all the larger pieces on the bottom of the Varoma and wings and small drumsticks on top. I've put it on for 30 minutes. I'm using two packets of Ingham's Chubby Chicken Pieces.

Then I'm going to put the pieces in the fridge to cool. When cold, I thought I'd dip in the buttermilk, then in the lumpy coating and pan fry, then place in the oven to keep warm while all are being fried.
I'll make gravy with the stock from the TMX bowl and serve with mashed potato and peas & carrots and corn on the cob!

I'll let you all know how this goes.

I love all of this experimenting. We may end up with KFC that is better than the original.  Chookie has already improved greatly on the oily-factor and we love the flavour.  :)

Julie I know just how you feel.  I still struggle to eat poached eggs after a bout of salmonella in Ethiopia.  They make my tummy turn just looking at them.  :-\ :-\ :-\

Chookie, I made these on Wednesday night and we all loved them! I also used skinless breast fillets and had to pre-prepare them before I cooked them (there's only so much I can get done with a bub screaming while holding on to my leg!!). I was a bit worried when I took them out of the fridge to cook as they looked a bit soggy, but when I shallow fried them, they crisped up beautifully. I made extra as I thought I'd freeze some for next time, so I'm hoping they thaw well and it doesn't affect the texture or taste at all. I'll let you know how it goes... Thank you, it will become a regular in our house  :)

OK, finally had time to get on here and let you all know how it went.  Not good.

I was organised earlier in the day and steamed my chicken and put it and the stock in the fridge. Then the day went pear shaped and I was rushed trying to get the spice mix made up. In my hurry, I added the flour to ALL the spice mix in the bowl! So, I added 1 1/2 more cups of flour, which turned out to be too much as the coating wasn't salty enough.

The chicken pieces in the packets were really disappointing. All wings, legs and thighs, and skinny ones at that. So, the final result wasn't wonderful.

I went to coat the chicken in buttermilk and it was mouldy! Still well within date too. (I've since found out my fridge is on the blink and turns itself off for hours at a time.) I had a bit of yoghurt that I added some milk to and used that instead.

The coating was good, though did threaten to completely come off a couple of pieces - perhaps because they'd been pre-cooked. The chicken was dry and I think this was because the pieces were so skinny. Didn't take long to cook, though and easier than having to continue cooking in the oven.

Next time, I'll do the pre-cook in the Varoma again, but will spray with oil bake in oven without frying first. I'll also get different chicken pieces, or maybe use boneless thighs or breasts.

I won't be too sad if I have to buy another fridge as this one's been a turkey since the day we bought it. It freezes up inside the main part of the fridge. At least I know when it's not working as there's pools of water all over the floor where the ice has melted!

Yummy, DD loved the KFC. DH found it was more like the hot and spicy one so will tame down the pepper next time.
I used the whey from my yogurt in place of buttermilk.
Made a popcorn version too:
Put 500g chick thigh fillets in TM for 30 seconds speed 4.
Added I egg, 1 tsp spice mix and 20g flour speed 4 30 seconds.
dipped little pieces in buttermilk mixture rolled in flour mix then re-dipped in buttermilk mix then re-dipped in flour mix.
I baked them in oven 180c  10 min then 5 min 250c as I don't like to fry sprayed with olive oil 10 Min's into cooking and turned pieces.

Chookie, I made this for tea tonight, using chicken breast fillets sliced in half horizontally again.  I didn't rest them in the fridge like I intended, time got away from me, but as it turned out I didn't need to.   

I shallow fried until golden then finished off in my new turbo oven on a non-stick tray that has holes in the base to aid in crisping.  They only took about 5 mins to cook through without any of the coating coming off.  Absolutely loved them.  This is the way I will cook them from now on, they are a real winner, thanks again.  :D

We had a vegie and bacon pie tonight so I decided to do some oven wedges to go with it. DD and DH usually put the spices on them and tonight they selected the KFC spices. They were lovely on wedges, so now we can have KFC chicken and KFC wedges.

Last time I made these I use Chicken Tenderloins as they were on special. I soaked in yoghurt and some of spice mix overnight, then coated in flour/spice mix and put in the freezer. They didn't freeze, just set the coating.

I found not a skerric of the coating came off in the frypan when I shallow fried. They were wonderful, cooked extra quickly and were delicious cold the next day.

Judy, they are very similar.  I've actually bought 2, one is an Easy Cook (link below) which is just like a convention oven, and the other is made by Sheffield (dramatically cheaper)  which is slightly smaller but is a halogen one that has instant heat.

I've got them in a separate room away from the kitchen and have been using them whenever I can instead of having to put on the main oven and heating up the kitchen.  They are really good, I'm very happy with both of them.  :)

The glass bowl self cleans like the TMX. Put hot water and detergent in and turn on!!

I only use mine in summer. It was great at Christmas as I didn't want to heat up the caravan. It cooked Oysters Kilpatrick beautifully!
Apparently, also great for low fat wedges. Just pre cook potato cut into wedges in microwave and then spray with oil and 'fry' in Turbo Oven. Add seasoning and away you go!

Yes they can fit in the dishwasher if you want to, but they are so easy to clean that I haven't needed to yet.
I've also done the way that Meagan does 'chips' and I have been doing my roast potatoes in there too. I also par cook them in the microwave for 10 mins then spray with oil etc and roast for approx 20 mins for lovely roast potatoes.

I have only had them for a few weeks but find I'm using them whenever possible.  It makes the best crackling on pork that I've ever eaten and it's keeping my main oven clean.  :)

I've had one of these for about 5 years and love it. Cook all our roasts in it and as JulieO says " Keeps the main oven clean". I put it outside to cook pork  on Christmas so save the house heating up. Also use it for wedges and quiches but haven't had much success with cakes.

Had one, used it in our small caravan.  in the shed now.  Don't think I will use it again.Good to use in hot weather as you can put it on a long lead and put it outside or in the laundry.  In fact have had 2.   First was a German made one that packed up really small,  with the heating unit at the back.   Bit like a fan forced oven.   Being all glass,  you can see things cooking.  pretty much instant heat so more economical than the oven .

I've done cakes on holidays in ours. DH bought a ring tin and cut the centre part out at the top. It still is a ring tin but the top of the internal ring is open. That way the air circulates really well and the cakes aren't too bad.
I can't do scones in it though.

After reading all these rave reviews, I just have to try this myself!  I have just finished making the spice mix, and was wondering if I could just mix it into the flour mix (minus the buttermilk) in the right proportions and store it like that - so that when I want to make some, I just need to add the buttermilk ...... or do you think it is better to store the spice mix on its own and mix it with the flour as you need it.  Cant wait to taste this - thanks chookie for the recipe, and thanks to everyone else for all the tweaks!

A big thanks to achookwoman. This was a huge hit in my family. I had to play a little with the spices as I didn't have them all. I used my trusty 'Food Substitute Bible' and came up with something that would be pretty to close to your recipe. I made it once and my DS9 said he wanted it for his party 2 days later. It was a huge hit there as well. Needless to say all the kids loved it and the parents kept coming back for more. This will on our picnic and party menu in the future. I also love the idea of putting the spice in gift hampers.

Well, what a hit! DH was over the moon, kids were rapt and so was I. As others have said, the only thing missing is the fat and grease. I used maryland pieces and baked in the oven with olive oil spray. Will definitely be giving some of this spice mix to friends, and kids already asking me to make "popcorn" chicken.

Made this last night didnt have greek oregano (just used normal) didn't have pepper flakes, added parsley flakes instead of celery seeds as suggested by others. The taste was very peppery and quite spicy, it cooked beautifully I shallow fried and cooked in oven for 25 minutes so chicken was lovely and tender what do you think I did wrong?

Yvette,  it is peppery.  That is as it is supposed to be.  If it is too spicy for you,  just reduce the amount of spice in the mix.  I do this for my grand children,  and they love it.  I don't think you have done anything wrong.

I took a jar of this when we travelled Chookie. It was used in lots of places, on wedges, sprinkled on steak and used to simply crumb chicken. A very useful item to have.

Cookie,  I have also found it makes a good pressie when someone has done something nice for us.   Glad you found it handy on your holiday.   Good for the caravan as it doesn't take up much room.  It also wont go off. ;D ;D ;D

I was doing so well on the freezer, but i cant resist both chicken dshes.

I dont feel too guilty as i am not buying heaps of ingredients, so i can justify it.  Gosh i am a crazy mama!LOL

Think maybe i should have used a load more breadcrumbs & less rub. I used 2 spoons of breadcrumbs and about 6 of rub, just seen chhokies breakdown, no wonder I was on fire....

Hally,  Judy is right,  you can us yoghurt mixed 50% with milk.  Make sure you get a lumpy mix as this gives the characteristic KFC crunch,  even if cooked in the oven.   Good luck. ;D

don't worry Hally you are not alone as I did this once in an similar situation when I used the spice mix with a gravy. unfortunately, I was trialling the gravy mix when we had a visitor and everyone was just gulping water  ;D from memory, I think there was supposed to be some flour in there somewhere but I used all KFC spice mix ha ha ha

When I. Make it for the GC,  I put only a little spice mix in to the flour.   Hally,  if you are making nuggets, it is a good idea to do the soaking in the buttermilk mix as it keeps them moist.

belfie,  I have made it for a friend and used 1/2 potato flour and 1/2 cornflour.  May be you could add a little lemon juice to the alternative milk.

Ok I tried it with the following:

normal milk (didn't read the lemon juice comment till too late!)

Instead of the wheat flour: 200g orgran crispy corn crumb, 150g arrowroot flour, 150g rice flour (made in TM with basmati rice), and I also threw in a tsp of xantham gum for good measure.
Popped it all in the fridge for half an hour or so before cooking, then shallow fried in olive oil.

And it was AWESOME!   That flavour is just yum yum YUM! The coating was yummy & crispy (possibly not as chunky without the buttermilk) but still delicious. It was devoured by all, DH declared it didn't taste "GF", fussy Mr 3yo gobbled it down, and Miss 1 inhaled her portion & looked for more.  Shall try with soymilk next time as don't want to push DH's dairy tolerance.  If I could find soy cream am wondering if that might work too.

Hi, a further update from me

I tried it with soymilk, and it tasted great. Plus I pared back the GF flours, just using 150g orgran corn crumb and 100g arrowroot flour (left out the xantham gum - that was just a crazy moment I think). and it was delicious once again.  I will add that i think it could be made without the garlic powder if a FM'er was particularly sensitive.

How about a tin of creamed corn add,  for spicy corn cakes?
I often dust fish with the spices in a little flour and dry fry them.
For the GK I make 1/2 strength.

I made this last night, wow!  I cut my chicken into nuggets (I'm always on the lookout for recipes I can call fast food names so my kids don't know they are deprived :D) and used natural yoghurt instead of  buttermilk.  I think I was a little heavy handed with the cayenne, the kids were not keen on the first batch, but after I scraped the yoghurt mix off their pieces they were fine.

I gave them a quick spray of olive oil and cooked them on a rack in the oven for 15 mins.  Perfect.  Made the coleslaw from the EDC which DS's (12 months) and I enjoyed (DD and DH are fussy salad eaters).  Might do wedges next time as well.

With my last batch (I made 3 from about 500g of chicken thighs) the flour mix was getting a bit gluggy.  My recipe was a bit different as I substituted yoghurt for buttermilk, and I didn't drain it off, I just popped it into the flour mix.  I rubbed the lumps in as I went, but the last few were not nearly as good as the first few batches.

So I am wondering if you didn't drain enough buttermilk off?  Or too much came off in the flour?  I gently did piece by piece, which was time consuming but I didn't want to loose all the yogurt mix.

Maybe if you divide the flour mix into 2,  as it seems the problem happens at the end.  Do 1/2 with the first lot of flour and then the second lot with the second lot of flour.

And I get out the recipe and there is always something else I need    ;D   ;D   ;D
The spice man loves me.   I visit every week.
Eventually I will get the complete list together without having used up all of one or more of the spices in something else.

RosieB,  although I worked hard to get an authentic taste to this recipe,  feel free to experiment.   I make up quite a large lot, x8, and it keeps quite well.  I use it in lots of different strengths in may recipes.

Had this again tonight. I think I have made this about 4 or 5 times in the last 16 months. We all love it. So yummy. I add a little extra buttermilk to the coating mixture to make it a little lumpier so when it cooks there are more crunchy bits.  A great recipe that I will be making for years to come :)

Dear Achookwoman, you are quite simply a genius. You are also my DH and two DS' s new hero. This is NICER than the original. I changed nothing apart from using milk in the flour cause I had run out of buttermilk. The best meal we have made with the Thermomix so far. This will be a firm family favourite.  ;D

Loved this again Chookie.  I still had some of the spice mix in the cupboard but there wasn't much of an aroma when I had a smell, so I added the relevant amount to a non stick frypan and heated over low heat for about a min until I could smell the lovely spices.  Let it cool and then added it to the flour etc.

Today I served with warm potato salad with honey & mustard dressing, coleslaw with Judy's sweet mayo and a tossed salad.  Delicious and crunchy.  ;D

Thanks Judy, it's a lovely treat.

Wonder I used chicken breast fillets sliced in half lengthways, the photo shows one of those slices.

I deep fry on 180C for about 3-4 mins, 2 at a time, the end result is lovely and crunchy but the insides are lovely and moist.

I have tried various methods (baking in the oven, shallow frying then finishing off in the oven) but have found the quick deep fry to get the best results and not at all fatty.  :)

Judy, have you thought of printing using black ink only?  If it's just to be able to follow the recipes in a printed form away from your computer it would be cheaper than using coloured ink.  You could just check the ebook itself when wanting to see the photos. :)  Or what I do is cut and paste into a document and follow from there (on my laptop), I can set out the recipes how I like them, and add any notes of anything I've done differently for the next time.  :)

What I would like to do is just print the recipe and forget about the photos Julie.  As much as I love a photo to sell a recipe, the cost to print them out is just not worth it.  I'm still filling in the missing words from my print out, such a big job.

Goldfish, save the pdf, then you can copy and paste the recipes from the saved file into a word doc.  You can't do it straight from the un-saved pdf (I tried).

When I got my copy of the book, I went through and did this with almost all of the recipes, I could then set them out how I like with the accomanying extras needed to make any of the recipes eg I put together the sugar & spice, gingerbread cookies, speculoos spread and ice cream bombs together as the spice mixture is used in all those recipes.

Once I've made a recipe and if it's one I will make again, I make up it's own page with a photo then put into my recipe folders (on my laptop) under the corresponding section.  The recipe in the word doc gets deleted as I've already made it and no longer need it there  IYKWIM.  I still have the saved pdf file as a reference.  I did the same thing with the Desserts ebook too.  Hope you can understand this.  ;D

Judy, if you understand what I mean you could do the part of pasting to a word doc where you can then print from. Just paste one recipe after another in the one document, doesn't matter how many pages it takes, you can just print off the pages you want at any time (or all of them of course).   It will save you a lot of ink, time and trouble.  :)

Made it today, with some whole spices (cloves) and it worked well. Though some pieces were overcooked as pan got too hot (may try oven next time). First batch of 4 had a perfect colour. Son looked at them and asked if it was KFC chicken :)

That said, neither DS or DD actually tried the chicken. No idea why not, instead they scoffed down the sesame buns. I made a Honey & Mustard dip to go on the chicken.

Me I loved it, and it does leave a lingering tingle in the mouth similar to our KFC though a touch "hotter".

Tarasis,  kids are funny little things!!!  My GC are very fussy about what they eat.  They will all scoff down my bread,  one will eat boiled eggs, another fried rice, another makes scrambles eggs for breakfast,  but all will eat the largest pile of my KFC.  I don't make the full strength recipe for them.

I made this for dinner tonight with free range chicken chops on the bone. I sprayed them with oil  and cooked on the BBQ. They were delicious, but the spice mix was a little too spicy for DS. However, DD loved it and asked me to make them again soon.

Black.    I made this for the 3 GC this week.  They ate nearly a kilo.  The poor eater ate 14 pieces.  The other 2 ate about 6 pieces each.  The poor eater ate the remaining 7 pieces for lunch the next day,  reheated.   Hope your lot like it.  I reduce the spice for the kids.

It was delicious - thank you. We used skinless breast strips and deep fried them, and used 2tbsp spice mix to 1.5 cups flour - just perfect for us, but removed the coating for the little one. Not much of an excuse to get takeaway from this particular establishment again  :)

Served it with coleslaw, mash and some of Jaime's get ahead gravy I had in the freezer. Will have to check the forum for gravy recipes.

The kids think it tastes more like KFC the next day lol. They all gobbled it up last night and loved it. They had leftovers for lunch at school today in a wrap with lettuce and cheese and all gone in their lunchbox too (which is rare). DH loved it also.

Also, I soaked the chicken overnight in buttermilk mixture and then did the coating about lunchtime, left in the fridge on a plate uncovered (in case cling film would stick to it), and in some spots it the coating went kind of a dark colour. So maybe I left it to sit toooo long, and an hour would be better ? When I fried them, you could see dark bits in places too, but tasted fine and no one else noticed. 

I was also reading over comments again after making it, I used green cardamon, and somewhere Chookie you said it should be black (I already had green), would this make much of a difference ?

I made a double batch of the spice mix, so will make again soooon. I used 1kg chicken and we've had two dinners, plus kids lunches for school. I love meals that I can cook for 2 nights so I get a night off cooking lol.

Deb,  it took me months of making and testing to get what I thought was close to the original.  I wouldn't even bother to make this as it has not enough pepper.  To say nothing about the last ingredient.  At the Chinese grocer where I shop,  they have Kilo bags of MSG.   This may be a very tasty Chicken seasoning,  but I can't see it tasting like KFC.  Thanks for the recipe.

We had this for dinner again tonight. I was in a hurry and on Better Homes and Gardens the other week fast Ed made something similar. He soaked the chicken in buttermilk for at least two hours and then put the flour and spices in a large snap lock bag then tossed the chicken straight in the snap lock bag and gave it a shake. He then let it sit for a bit in the bag and then deep fried in batches and put them into an oven on low. Because I was in a hurry, I tried this way tonight and whilst it doesn't have quite as many crunchy bits, it was still really good and was very fast and not much mess either. I'd probably do it this way again purely because of how quick it was !

Kids (and us) ate the lot this time  .............. 1 kg of chicken. No leftovers this time !

Chookie, it's really quick ! With little kids running around ....... it's gotta be quick ! Also, this is a funny thing ....... I fry the chicken in batches, and put it in the oven on 100 degrees ...... the longer it's in the oven the more it tastes like kfc !  It's like the spices absorb or something.

My parents live down the coast and they've been away for 8 weeks and arrive home on Sunday ! They've really missed the kids and it's a long weekend here, so we're going down to their place on Saturday and staying till Monday to surprise them. But, they will be jetlagged so I said to the kids, we need to organise dinner for Sunday because Nanna will be tired and they won't have any food in the house, so guess what they want to make down the coast ! Yep KFC chicken ! So we'll be making it on Sunday again lol

I make a lot of this and keep it sealed and use it in lots of different ways.  Last time I cooked fish in Panko crumbs,  I added some to coating.  Just a little.

I'm planning to try. I think Astarra has made it before.

I bought the various ingredients last week. Just need time to make butter to get buttermilk. Not sure if I should chop up a chook to make these with bone in, or use fillets.

BZB,  1/2 yoghurt and 1/2 milk works ok.  I like it with bone in but kids like it out.

Will try in my airfryer soon. I cut up a chook just now and the pieces are now in their yoghurt and milk bath. Bone in. Will see how it goes tomorrow,

Astarra, did you cut up the chook into small pieces since the Actifry has a paddle?

BZB,  adjust the seasoning to your taste.  More pepper or Chilli?  With our GC I use 1/2 strength.  When we have the 4 of them together,  it is the only meal that I know they will all eat.

Chookie, the taste was amazing! My 3 boys loved it.

Don't think I made it perfectly though. Firstly, I wasn't sure about the size of the lumps in the lumpy mixture. Is it still meant to be powdery, like sand? I added more milk when it looked too dry. Ended up with big and small lumps.

Hence, I got lumpy coating on the chicken. Plus the airfryer couldn't cook it evenly enough for a more uniform colour. There were whitish sections which didn't go away.

Will have to improve my processes, as the family wants to eat more of it. They were arguing over the last thigh :D

BZB,  glad the boys liked it.. Mix should be lumpy  and no white powder.  You were right to add more milk.  If I am doing a big batch ,  I make 2 lots as it gets pretty messy with just 1 mix.

Chookie, I've watched 5 YouTube videos to get the coating technique right.

The similarities in the videos:
- they dipped the chicken in an egg plus milk mixture before dipping into the flour mixture. I think that won't be necessary for this recipe as the pieces came from a buttermilk marinade. But perhaps shake excess marinade off, before dipping into the flour mixture? Hopefully that would avoid the flour from clumping together into big balls
- the repeated egg dip, followed by flour mixture. 2 coatings. I could repeat with buttermilk and flour mixture
- they used their hands for this process. I used tongs :)

BZB,  I certainly use hands.  It is a very messy business.   I hate sticky hands.  I keep a sink of hot water ready for frequent hand washing.  I agree with you,  it doesn't need the egg dip.  I also don't think it needs 2 coats.  I think the tongs might be your problem.  Let me know how you go.

BZB I also think the tongs are the problem, you need to press the mixture on a little which you wouldn't be able to do with tongs

Just finished reading all 26 pages of this thread :D. I can't wait to try making them now. Now to track down the few herbs I'm missing (thought I might try and get "whole" versions of stuff I already have) and also decide to do chicken tenderloins or drumsticks.

made this today for the 1st time. omg ACW its very nice

i didnt add the 2 tablespoon of buttermilk to the flour mix

i dipped the chicken in the flour mix then back into the wet mix then flour mix again

 sprayed oil every 5 mins it cooked for 20mins at 200 in the air fryer
