Title: potato salad - cold

Does anyone have a good cold potato salad recipe?  Or would the "Chicken and Potato Salad with Sun-Dried Tomato Dressing" be nice cold and without the chicken?  Wanting something suitable for Christmas day.

I made the Sun dried tomato dressing yesterday & used it in my everyday potato salad & it was delish. I halved the dressing recipe & it was still plenty for a medium salad. I will be making it again for christmas day

Jan, thank you so much.  So just the dressing and cooked potatoes?  Anything else you add in your everyday potato salad?

??? Not sure what happened - I did reply to this thread last night but It obviously didn't save. 

There is one in a WW BBQ or Light meals book with pesto and pine nuts and cucumber?  that i Love - something like this http://aww.ninemsn.com.au/article.aspx?id=782637 (http://aww.ninemsn.com.au/article.aspx?id=782637) but with cucumber instead of rocket.

I made this salad exactly as per the recipe (except only 1/2 the eggs) on Sunday to have cold on Monday and it was lovely and everyone enjoyed it.  It's a large salad but I'm finding the leftovers nice for lunch but if you are serving less than 8 i would half the recipe.

Fantastic!  The recipe sounds great, just wanted to confirm it's also good cold.  Thanks for trying it out for me!

Sorry I didn't get back to you straight away Cathy79. Like many others here I am in the middle of end of year children's concerts, school & work christmas parties and graduations.
i just use Potato, red capsicum, boiled eggs, peas, ham & spring onions.

Thanks Jan, that sounds great.  I cooked my potatoes, eggs and peas last night, so will finish off sometime today, hopefully in time for lunch.  Will report back.

My basic recipe is potatoes, celery, eggs and onions with S & W mayo. After that anything goes. Peas carrots, bacon, ham or anything that takes your fancy. I like mint and peas as well. Never made the same one twice in all my years. Use pesto instead of mayo for a change and sour cream is good too. Peel the potatoes or don't. Raw veg or cooked. Surprise yourself.

LOL- must have gone to the same cooking school - I often surprise myself with what I concoct  :o :o
