Lime & Macadamia Fudge
Ingredients:
395g can condensed milk
500g white choc melts
150g macadamia nuts, chopped
2 limes (zest only)
Method:
Line a 18cm square tin with a piece of baking paper (so that the paper comes up the sides).
Place the lime zests in the *: and grate finely (10 seconds, speed 8 ). Set aside.
Place the melts into the *: and grate (5 seconds, speed 8 ).
Add condensed milk to the *: and melt/combine (approx. 5 minutes, 50 degrees, speed 1). Check often and stop when fully melted.
Add zest and chopped nuts and combine (approx. 30 seconds, speed 1).
Tip into tray and refrigerate until set. Cut into squares and keep in fridge.
Notes:
This recipe was taken from the first 4 ingredients cookbook.
I prefer to handchop macadamia nuts (they easily over-process in the *: ). I just give them a rough chop while the chocolate is melting.
If you use nestle melts (375g bag) and don't want to buy 2 bags , reduce your condensed milk to 300g so that it will still set.

ILB - made this and licked the spoon after putting it into the tray. Think I would have done the zest of 2 limes, but it's hard to judge on such a small amount.
Note, Chelsea has since added the extra zest to her recipe. JD

It certainly sound simple and yummy. And YES it does sound like a couple of Tenina's recent creations with the chocolate and condensed milk.

Thanks Tenina. I'm glad you liked it. The 4 ingredients cookbook has a couple of recipes that I like and a lot that I don't. That one is a beauty though. I've tried looking for your chocolate and condensed milk recipes on your blog - are they somewhere else or not yet available??

That's why I was looking for chocolate and condensed milk recipes on your blog?? Always on the lookout for recipes to satisfy my extremely sweet tooth.

Don't forget this little gem at Christmas from the 4 ingredients cookbook. I am making it later today and am debating whether to use the lime/macadamia combination or perhaps try a craisin/pistachio combination like the yummy shortbread. ;D

Oh you bet me to it ILB. I was just logging on to remove that note. I made it today with the zest of two limes (as I needed the juice of two limes for cordial anyway) and it was lovely. I hope it is still ok.
P.S - This recipe (using 375g of melts and 300g condensed milk) combines well with a single batch of cocoa salami. You can make them both with the one tin of condensed milk.

Did you try the variation, Chelsea? If so, what sort of quantity did you use of the craisins, please? Craisins go down a storm in this house.

Sorry Caroline I just used limes in the end. I promise to try it next Christmas and report back. I need to be very good now for a few weeks after indulging in too many Christmas treats! :)

I made this today for my dad and grandpa for Father's Day, it was delicous. We loved it. Thank you for posting the recipe.

We made some yesterday too (just to check that the recipe was still ok ;)). It is very sweet, but rather yummy! I used pegs to hold the baking paper in place (thanks Isi for that great idea) and it made it all so much easier.
