This is really cool, check out the ingredients! :
160g smooth peanut butter
3 eggs
1 tbsp white vinegar
1/2 tsp bicarb soda
1/4 tsp salt
Preheat oven 180 degrees Celsius
Add peanut butter and eggs to TMX - 10 sec, speed 5
Scrape down - 5 sec, speed 5
Add remaining ingredients - 5 sec, reverse, speed 4
Pour into small loaf pan
Bake 30-40 min
Let cool before slicing
My notes:
- I don't have allergies or a special diet but I was searching for low carb/high protein bread recipes on google last night as I want to get back into fitness and stumbled upon this http://247lowcarbdiner.blogspot.com.au/2011/03/mr-peanut-sandwich-bread.html (http://247lowcarbdiner.blogspot.com.au/2011/03/mr-peanut-sandwich-bread.html), converted to TMX as I couldn't wait to try it
- mine made a tiny cute loaf, too small to make a sandwich like on the blog (each slice was biscuit sized) but well worth making if you need gluten free options or want high protein snack food
- it's really soft and surprisingly bread-like, I am going to make this again as a choc option with cocoa in mini muffin forms and play with some variations for healthy snacks
- prob high in calories but you won't eat the whole loaf in one sitting

That's a really cool recipe ! No flour but it looks like it has flour ! So does it have a strong taste of peanut butter ? My kids and husband hate peanut butter !

Its fun isn't it fundj? Seems so freaky without the flour to turn out just like bread. I couldn't wait to try it either. I had a few slices and popped the rest in the freezer to test its 'freezability' !
Debbie it has a bit of a nutty taste but not strong. I made a cup of home made peanut butter in the TMX directly before baking this. Apparently you can make it with other nuts too with varying results. I think a choc/nutella type one would be interesting !! (prob cancel out the healthy aspect of it though but would be really yummy)

the tin size i used was a 22 by 11 1/2

Walnuts sound like a good option Fundj, would you mill them with some walnut oil to make your own paste in the tmx? Would you flavour with anything else?
I am going to try cashews next time, maybe with chocolate but will have to be careful to keep the mixture light and fluffy.
By the way, this recipe freezes perfectly! I froze most of the loaf and you can easily slice the portion you want when its frozen as its so light. Yesterday I had two small slices at 10am and it kept my hunger at bay til lunch time.

made this today in a smaller tin i added less than a hand full of walnuts to the mixture + more on top , yum ;D

That looks really nice Fundj. Did you make walnut paste with oil and replace the peanut butter altogether (or just add some walnuts to the original recipe)? I must buy a tiny tin...

I am just experimenting with steaming this little loaf as it fits neatly into the Varoma. 40 mins was fine for steaming from a cold water start. It was fully cooked.
I noticed that 1 tablespoon of white vinegar weighs 10g, so next time I won't have to wash up the tablespoon! (Every little helps.)
This is decorated with cashews, as I ran out of peanuts.
The second pic is after I popped it into the oven (which just happened to be hot already) for 5 mins to get a bit of crust.

made this for the second time this morning. decided to make them muffin size. dont do this. they rise lopsided and look like little crocodile heads instead of a nice muffin shape!
still tastes great though. i might have to invest in a small loaf pan. love love love this bread.

Thanks for reminding me about this one, I have been meaning to experiment more, particularly now that I have removed sugar from the kitchen. Good tip about the muffin tins, I definitely won't do that now and will stick to my silicone bread form (might buy a mini tiny cute one). I did try adding cocoa, it looked really rich and chocolatey but due to no sugar, was quite bitter. I didn't mind that though, but it shocked a friend who was expecting it to taste like a sweet cake. ;D

That breakfast looks great. I am looking for suitable containers to steam eggs.
