Aaargh!!! Have people coming for pizzas tonight...all very casual. Thought I'd make EmaraldSue's Fudgy Chocolate cake for dessert. (The one with chickpeas - had to try it.) As I poured the batter into the tin, I thought to self that it isn't exactly runny and there's not alot of batter - should have been alerted then! I put it into the oven and, as I was cleaning up, I found the 4 eggs that should have gone in it - so much for getting out all ingredients beforehand - I completely overlooked them! I scraped the batter back into the jug and added the eggs, relined the tin and popped it into the oven, hoping it would be OK. Stage left comes darling son who decided he'd make a quick late lunch. Twenty minutes later I find the oven has been turned off....Aaaaghh! I'm still hoping it's not a total disaster!

I think I've picked up both at Leo's supermarket in Hartwell. There's another Leo's in Kew I think. Also you could try Sunnybrook healthfood store in Ormond. Sunnybrook have an online store. :)

I would love to know how you get on making it Nikkit.

We are dairy free and gluten free here, so Coyo has been a real treat - the plain Coyo is an excellent cream substitute. I use it for cooking too - such as in Sue Shepherd's Famous Chocolate Cake which is in the Gluten Free Wheat Free Cook book - my go to recipe for birthday cakes these days.  :)

I've made it several times as it's easy and uses up over ripe bananas. It's great to take to those social occasions which require a plate and it seems to be quite popular even when I don't ice it!

Hmm. I knew if I looked long enough I'd find a thread which would discuss catching. I've just made the sauce for butter chicken tonight and it caught at 9 and 3 o'clock on the jug bottom (if the handle is at 6 o'clock.) It's so odd as I've made this several times and not had it catch. I've used a scrubbie to clean the jug and I'll go back later and try the Bicarb paste to make sure, but will also try a half speed faster in future. Anyone else have this happen?

I bought stainless steel saucepans, with a copper base covered by stainless steel in 1977 when we returned from our first round of country service. I loved them then and I still love them.

Ooh! Me too Cookie! We bought a set of stainless steel saucepans when we got married and even though I've done my utmost to destroy them over the years (eg sterilizing baby's dummies and boiling them dry, melting the plastic to a black mess!) they've survived and still look and cook really well. I think they were Krona - long gone alas. They have nifty little steam vents which I find useful. A few years ago I added a couple of RACO pans with the same feature, but I can't seem to find them these days. As for non-stick cookware I quite like Swiss Diamond - especially when on sale!

Main Dishes / TM Balti paste and Lamb Curry

TM Balti Paste and Lamb Curry

Serves 6

1/3 - 1/2 the quantity of TM Balti paste from Fast and Easy Indian Cooking book
1kg lamb pieces
1 cup of yoghurt (I used coconut yoghurt for dairy free)
1/2 tsp salt
water.

In a casserole dish, marinate the lamb with yoghurt and salt for about an hour. Mix the balti paste through the meat and add a little water (and any chopped veggies you feel like adding.) With lid on, cook in the oven for about an hour and half to two hours and stir occasionally and add water if necessary.
Serve with basmati rice and dahl. Yum!

I'm freezing the rest of the TM Balti paste to do this again. This went down well at our house and it's so easy!

For my birthday boy (19!) I made Sue's Famous Chocolate Cake from the Gluten Free Wheat Free Cooking book. It's gluten free and I used a dairy free coconut yogurt, soy milk and coconut oil to make it dairy free too.  Yay! I'm very pleased with it - it has a nice texture, it's not heavy, it has a good height and it's delicious served warm with coconut yoghurt. Yum!

I made these for an easy meal tonight (with a little twist of smoked salmon on top before popping in the oven) and served them with high protein salad...and I watched them just disappear. Family loved them! This is a keeper. Thanks!

Oh how I love my Timmy! It's going to be 'hot' here in Melbourne over the next day or two, so this morning I marinaded some chicken in the TM tikka paste I had in the fridge and popped it in the oven alongside the lamb chops I covered with left over TM saag sauce that I'd frozen. So we're set for the next two nights...the family can choose from the menu (!) and microwave as desired. That's what I call cool cooking! :D

Finished painting the laundry. Feels good! There's something about a freshly painted room I really like...could have something to do with a lack of clutter! ;D
