Chit Chat / Re: The Paleo (Caveman/woman) Diet
« on: August 25, 2015, 07:45:24 am »
Well done Dot! Increased mobility, pain reduction and weight loss all speak volumes!
You inspired me to try making nut butter, which I had never tried so I've now got a jar in the fridge. Happy with that and feeling like trying a sweet treat,  I went further and made a batch of biscuits - yum! Thanks for the recipe - so simple!  I do love my Timmy!

DD you are not alone. I don't post much but I visit this forum often and always check here first when I'm looking for a recipe. I went paleo just under a year ago to try and stall arthritis symptoms, and also to that end I  eliminated nightshades (tomatoes, potatoes, eggplant, capsicum, goji berries and chillies). And I feel GOOD, so there's no way I am going back. I dropped about 5 kilograms and a dress size. I've recently taken up  martial arts and train a few times a week so I feel fit, strong and lean. I've just turned 60 and I consult a dietician regularly to make sure I'm on track.

I've found Sarah Wong's blog 'Clever Cook' really very helpful. She's known for her magic bean chocolate cake (which works wonderfully well with a can of butter beans for those times I need to make a cake) and 'I can't believe it's not dairy New York Cheesecake'. (She does have something of a sweet tooth!) Her recipes are mostly paleo and she uses a thermomix. I am particularly fond of her fig bread recipe which I stack full of fruit including figs, citrus peel, apricot pieces and chopped naked ginger (wonderful), and  I use chia instead of linseeds. She has a swag of grain free bread recipes which I'm slowly working my way through but keep coming back to the fig loaf.

Interestingly, tonight here in Oz there are two male television journalists going to air to talk about their health issues and about going paleo.

I've been looking to expand my salad recipes so was pleased to come across this post. I made this salad last night (recipe from EDC) and despite some misgivings about eating raw broccoli my DH loved it. I left out the onion and used a glug of TM mayo along with a little less yoghurt and was very happy with it. I didn't bother peeling the pink lady apple and it looked quite festive.

I'm a bit of a fan of the paleo diet because I've seen its benefits for a close family member who had gut issues and needed a gut healing diet. Our family was on a modified paleo diet for a couple of years with the help of a dietitian and now pretty much back to normal, though still much reduced wheat consumption. The health of the whole family improved while on it. I'm about to go back on it because after I started relaxing my own diet (and making bread for DH!!) I've developed arthritis nodules which I will do anything to reduce and the paleo diet is reputed to help reduce inflammation. I intend to see the dietitian again to help me forward.

I tend to think that it's a diet you go on when there's a good reason to do so. It's not a fad but a necessity for some.

News about Thermomix / Re: New Model Thermomix, truth or rumour?

Is it just me or does anyone else think the TM5 looks like Marvin the paranoid android from the 1981 TV series "Hitch Hiker's Guide to the Galaxy"?

Bread / Re: Five Seed bread - replaces Cape Seed Bread in EDC book
« on: August 11, 2014, 02:39:54 am »
I had a go at making this bread yesterday - with a few tweaks - and I'm really pleased with it. I used about 30 - 50 grams less water (despite what the EDC says about keeping it sticky!) and kneaded it for a full 5 minutes and it came pretty cleanly out of the bowl. It still felt a bit sticky so sprinkled it with flour before putting it in the oven with a bowl of hot water to prove for about 40 minutes. It needed a bit more more flour so I hand kneaded it for about 30 seconds and it felt perfect. I put it into the oven for another 30 minutes to prove with more hot water and then cooked it for 35 minutes. I'm very happy with it.

And I added a teaspoon of bread improver and a half teaspoon more of both yeast and salt!

Welcome Jenni from another Jenni in Melbourne! :)

Yay! The knead function does work!  ;D

I used the same Italian flour and got a similar sort of result though with a little more rising - very nice with a wonderful crust. It's a '0' milled baking flour for bread. I've used '00' before to make pasta, but I've not used it to make bread...

Thanks Cookie!

Because I hadn't realized that the closed lid position was my problem, I had gone ahead with "kneading" the dough with  ^^ function. After the first rise, the dough was sticky so I added more flour so it felt more like I thought it should and put it onto a tray. The dough didn't rise a great deal the second time and I thought about giving it more time but I baked it anyway. What I got was a ciabatta type loaf and it was delicious and crusty! Family thought it was a success! Yay! But I will have another go with the  :: function and hope it does indeed work! :)

I'm using an Italian baking flour and I believe the European wheat grain is slightly different from Aussie wheat. The result should be slightly different - right?

Love this forum! Love my Timmy!

Thanks Sue...that may be the problem!

Hi wonderful thermomixers,

I'm having a go at a making some bread (usually don't eat it as a family member is gluten free) but thought I would make some bread to go with some dukka I made in Timmy and, well... I like a challenge!

I'm using Cookie's vienna loaf recipe and all was well until I pressed the  ::  button and the symbol didn't come up on the display like the  :-: does. I've never used this function before so I don't know how it should behave. I'm pretty sure it should be doing something...please help. Thanks!!

Hi Gert...nice loaf!  I seem to be missing something here though...what is silicon paper? I scoured the shelves of two supermarkets and only found baking paper. I'm figuring they do the same thing but you've got me wondering...  Thanks! ;D

Soups / Re: Cauliflower and Bacon Soup

Lovely! Even my son who doesn't like cauliflower likes this soup! I don't bother with the cream and I use a splash of dry sherry instead of white wine.

Wow! How useful is this recipe!! I tried this on my family over the weekend and it went down a treat. I love that I can make it ahead of time and leave it in the freezer and it cooks beautifully. Yay! Thanks Farfallina. Love this forum!

Chit Chat / Re: THE SHOPPING THREAD :-)
« on: May 18, 2014, 05:21:25 am »
Yay! I finally did it! Bought an iRobot Roomba 630 after being inspired by posts on this thread! Thank you posters!

We have a much loved german shepherd dog whose coat seems to shed continuously and it's worse when he's moulting, so our floors always seem to have wisps of dog hair floating about and a layer of hair collecting on the rugs - no matter that I may have just done a thorough vacuum. I get Robbie to do a quick run around the main areas of the house and problem now solved! Quite entertaining too as the dog regards Robbie with much suspicion, especially when Robbie gives him a gentle bump and he has to move! Also loving that Robbie goes under furniture and the special attention he gives to doing under beds! Even my 20 year old IT obsessed son was impressed by what it can do. Loving it!
