I made this one today, couldn't get cranberries so used ginger instead. Took a while to make and I made a hard job of the rolling stage too but eventually had 3 thin rolls in the fridge. Tonight I cut them all into thin slices and put them into containers to give people. I see most people just give then away as 'sausages' but I decided to make life easier for the recipient and do the cutting myself. Of course, all the end bits went into my mouth. I was so surprised to see it did look like a piece of salami when cut as the mixture itself didn't indicate this would be the case. Some red to go with the green of the pistachios would have been nice but at this time of the year it is not unusual for our supermarket to run out of things like this.

Yes and a real winner for the hampers. I was a bit worried about not knowing when the water had evaporated so I checked through the hole with a torch every now and then - that's a great way to see what is going on without opening the lid. Then when it had all evaporated I liked the way the machine noise changes and you just know it has got to the point you were waiting for.

Hi welovefood, welcome to the forum. It's nice when the whole family is excited about a new machine coming into the kitchen. Sounds like you are going to have quite an audience and lots of little fingers wanting to press buttons. Have fun.

Good on you Gretchen, it is the only way to go if you can afford it. I've only ever flown once in business class to America with my DD1 and she used the frequent flyer points she had - I loved it.

I decided to fix the batch by making another lot but then added NO sugar to it whatsoever. I then mixed that into the first lot of syrup and voila, a perfect cordial - to my taste anyway and I'm sure the kids don't need that much sugar either.

I decided to make my own castor sugar today for the first time so followed the instructions on page 6 in the Summary Table of the EDC. The time stated almost turned it into icing sugar so I made another lot and adjusted the time and speed downwards to make perfect castor sugar. Try 2 seconds on speed 8 and not that stated in the book. Was it just me or have others found this too.

I made a single batch of this today, so easy to make and not that expensive either. It was a little too sweet for me but DH thought it was great.

It pays to wait until everyone else does the ground work for you. I made these today - did the original recipe but cooked them in the oven as suggested and I couldn't believe how delicious they were. Not what I was expecting and so good I have to make another batch tomorrow. Thanks so much for this recipe and JulieO for working out the best way to make them.

I finally got myself moving today and did some Christmas goodies. Made the sugar coated almonds, chocolate salami and berry cordial. Cooked some chicken drumsticks coated with my orange/carrot marmalade plus some sambal oelek in the weber with some potatoes/salad for lunch & made 2 lots of butter (finally found 4 x 300ml cartons of cream out for 50 cents ea). Wanted to do more but ran out of steam, it is pretty hot here today.

How do you think you'll go over Christmas Pauline? Must be the hardest time to stick to a diet I used to make the sago puddings out of a Weight Watchers book - not as nice as the Women's Weekly ones but so much lower in fat.

Yes, I think she underestimated the devastating effect it was going to have on her little one. They are so into the fantasy world at that age - it is a pity it comes to an end when they find out the truth about FC.

ILB, you are going great guns. Hope you aren't sampling too many of the goodies you are making for your hampers. Love your new avatar by the way.
