Title: What are you cooking for Mother's Day?

I can't believe its nearly here already, and I've hardly thought about what I'm going to cook :o :-[

I have an idea for dessert: I'm going to try making chocolate cases with cheesecake mixture in them. I'm hoping to post the recipe if they work. But I have no idea what to cook for a main course :(

What is everyone else cooking, or having cooked for them? ;)

My DD is having me and her in-laws for lunch so I told her I'd love to help her out - it would get me back into the kitchen for a good cookup.
I'm making a Vienna loaf, EDC beetroot salad, Chicken parmigiana bake (non-TMX recipe) and Peaches & Cream dessert from the forum.

It's Mother's Day so it will be DH and the DS that will be cooking for me on Sunday. Truth be known, we'll probably end up at one of the restaurants at Burswood.

Judy, your meals sound lovely and I'm sure you will have a great time in the kitchen with DD :D What a perfect thing to do on Mother's Day.
I'd be interested in the recipe for the chicken parmigiana bake :) What cookbook is it from?

I got it from a magazine Amy - Australian Table which I don't think exists now.  As luck would have it though, I found the exact recipe for you online here (http://www.lifestylefood.com.au/recipes/14051/chicken-parmigiana).  I love that it can be made ahead and just reheated when needed.

That does sound great Judy. Must try.

Auskick super clinic for us on Mother's Day.  So mum is doing the cooking for lunch. Think it's different flavoured quiches and salad. I will make a dessert, but not sure what yet. Any thoughts Amy?

I would do cookie pops for the dessert Kimmy, maybe a few different flavours and decorations :D
Or caramel tarts using buttersnap biscuits, caramel top 'n' fill, and melted chocolate :D
Or chocolates, like CC's peanut butter bon bons :D

Or all three ;D ;D

I'm making  the Spanish rice pudding  it is to die for I put a teaspoon of vanilla in it instead of lemon absolutely delicious cold too.

Thanks JD, my DS would love the parmigiana recipe - he has just discovered the joys of a Chicken Schnitzel Parmigiana at our local pub, kids eat free on Sundays, we have been a couple of times in the last few months.

I need some help too. My brother has kindly invited all the family to lunch for roast lamb, and I am on salad duty. I am looking for a salad recipe that I can prepare the night before as we are doing the Mothers Day Classic walk in the morning. I was thinking of a brown rice salad, but will need another salad. Any suggestions?
PS please don't suggest the beetroot salad as it is one of the few things I don't like:(

ES, a favourite of mine is the wombok Salad on the back of the Chang's Noodle packet. You can assemble the salad, make the dressing and just add the noodles and dressing when ready to serve.

That is very popular whenever it's served Michele, love it.  I always keep back some of each ingredient because if the whole salad isn't eaten in one sitting, it will go soggy.  It has lasted me for days this way with the cabbage etc in a ziplock bag, the seeds and almonds in another and the dressing in a lidded jar.

We are going to a friend's place for a roast dinner at lunch time, am apparently getting breakfast in bed and DH is doing tea, So I have no idea but just know I am not cooking - that is enough for me!!!!!  ;D

We'll probably go into Shark Bay for a coffee and dinner will be something from the freezer, but DH will possibly defrost and reheat it.  ;D :D

I am usually the same ad you Amy. But we have had a month that included lots of decadent things thanks to Easter, DH 40th and DS 6th birthdays. Definitely don't need any more decadence :)

Hally, I love the sound of a buffet breakfast! It's my favourite meal of the day :)

Kimmy, you should ban DH and DS from having decadent birthdays so you can have decadence on Mother's Day ;D

Cookie, I like your plan, sounds relaxing and easy ;) :D

I'm thinking now maybe a roast for lunch. But my mum is a hard one to cook for, she doesn't really have an all-time favourite meal or anything :P

Well, nana and grandpa are coming for lunch now, so that makes it easy ;D ;D ;D

Slow roasted chicken, mashed potato and cauliflower cheese for mains.
Stewed apple pudding with custard for pudding.

See a theme? ;D

Unfortunately I won't be able to make my little cheesecake case thingys. But that's okay :)

Put all ingredients in TMX - speed 5 - 30sec insert butterfly and beat speed 3 for 30-40 sec - just perfect!!!! Play around with the times if the icing is not smooth - I used room temp butter.

Heres is JD BUTTER ICING RECIPE

Chocolate butter cream
125g butter - room temperature
3/4 cup (90 g) icing sugar
2 tblspns milk
2 tblspns cocoa
Butterfly in, speed 4 until mixed, scraping down sides and mixing again.

why so many cupcakes Robyn?...are you catering?

I wish we were going out  :-\  I'll be preparing food still at 2am  :-))  Football took up a lot of the day, then I was distracted shopping, and when I finally got home, had to drive all the way back in to pick up DD as she fell ill whilst skating, then the remainder of the day was gone  :-\

...anyway, cupcakes not long out of oven, made up some crispy olives and about to make some salmon cones (frozzies), and prosciutto roll ups. 
Decided i would make pulled pork for tomorrow's lunch, so getting that together for the slow cooker at midnight.  I'll make some fresh rolls in the morning.  I completely forgot that my Brother also has hemochromatosis, and can't eat pork, so have chicken tenders marinating for a tandoori salad he loves.
I had made fresh ricotta & a cherry compote for a Japanese blossom cheesecake.....but I just cannot be bothered at this point, besides, I remembered there's still 3/4 of a frozen Swedish cheesecake from Easter....so that'll do!

All our kids, grand kids, nephew and partner come here but all the males bring something they have made and they take care of us girls.... Keeping our glasses full of champers for example :) my dh is doing a side of fresh salmon oven baked in a  creamy dijonnaise mix .  I have a lot of cake off cuts in the freezer from November when I had to make large slab cakes to cut a mermaid from for granddaughter no. 1. We have crumbed them in the tmx and added 70% dark chocolate, butter and syrup all melted and mixed in with a bit of coffee liquor. Rolled into balls and finished in coconut.  Made some with walnuts too.  Very nice and made us feel good and frugal using up something from freezer - LOL!  Looking forward to seeing what the fella's bring along tomorrow!

Last night mum asked SD's sister and her husband around for lunch, we don't have enough fruit or veg so an early morning trip to the shops is on the agenda now :-\ It will be nice to have all of us here, but I just get stressed when things happen last minute after I think I have things organised!

I'm sure she doesn't mean to stress you. She is probably so proud of your ability that she thinks you can cope with no problems. Take it as a compliment, and don't stress too much.

I won't be cooking today. We will raid the freezer. DH has just done the washing, bless him. We're all going out for coffee this morning.

This morning he decided I needed breakfast in bed. I generally don't like it, so this is how it was served.

He said it was nearly in bed because I only had to get up and move about 4 metres to get it. What you see is about half the kitchen bench and the wall on the left is the shower and toilet.

Thanks Mich, Judy and Cookie ;) :D Unfortunately the stress did get to me and I burnt the pudding and made the mashed potato like glue :-\ But the chicken, cauliflower cheese and custard were good ;D

Well the boys were all brilliant.   Son made chicken lasagne and veg lasagne, son-in-law no. 1 made silverside and chips, DH 's salmon was great and he also made roast pumpkin and feta and herb stuffed capsicum and was kept busy as a wine waiter, son-in-law no. 2 made a rich chocolate cake with raspberries. So all was lovely.  Will be eating a lot less tomorrow to compensate ;)

Here is Quirky Jo's raw macadamia lime cheesecake. All I can say is delicious, but not sweet, just yummy. Haven't told the avocado haters what was in it yet :D

Our lunch went down very well but of course I overate as I haven't seen that much food in ages.

DD made antipasto plates to nibble on whilst we waited for everyone to turn up, lunch at 1.30 was a ragu/pasta dish DD made in her slow cooker and a huge Caesar salad, her MIL made a lasagne and I took the chicken parmigiana bake, a loaf of bread and a beetroot salad.  Unfortunately DD dropped the beetroot salad and the bowl smashed  so that ended up in the bin but there was plenty of food so it wasn't missed.  My bread all got eaten so I was pleased about that.  The girls made and served everything but then the boys tidied up which gave us time to have a break before desserts were served.  

Someone asked GS if he had room for gelato and he told us he had some space in the middle of his tummy and some at the sides LOL.  A lovely day albeit it a very wet, windy one as the day progressed and at the end of it, I am one very tired Mother.  

I hope everyone had a lovely day.

Maddy, way too late now but people with haemochromatosis can eat pork. They have to limit their total iron intake but a bit of pulled pork isn't a disaster healthwise.

Went out for brunch at a nice place with No. 1 son, #2 son lives very far away and owns a restaurant.  They did a Mother's Day brunch and the restaurant was filled with tulips and they made Pannekeok (Dutch pancakes) and Tulip Julips with Dutch vodka in honour of his Mommy.  They sent me pictures and said they ran out  of pannekeok as almost 80 people ordered them instead of everything else on their menu.  Made me feel like I was there having the brunch n my honour.  #3 son had to work sadly but will do something nice one day soon.  Husband of course bought me tulips as always.  I love them : )

Went out for brunch at a nice place with No. 1 son, #2 son lives very far away and owns a restaurant.  They did a Mother's Day brunch and the restaurant was filled with tulips and they made Pannekeok (Dutch pancakes) and Tulip Julips with Dutch vodka in honour of his Mommy.  They sent me pictures and said they ran out  of pannekeok as almost 80 people ordered them instead of everything else on their menu.  Made me feel like I was there having the brunch n my honour.  #3 son had to work sadly but will do something nice one day soon.  Husband of course bought me tulips as always.  I love them : )

That sounds so lovely, Woerd!  My DS was working also but caught up with us at around 7pm

Thanks for all the salad suggestions, but in the end my brother asked me to bring bread instead. He was  trying to make Mothers Day easy for me as he expected me to buy the bread, but of course, I made the bread myself :o I made a version of Helene's one minute bread, mixing it up the night before, setting the second rise before the Mothers Day Classic walk and finishing it off just before lunch. I also made some quick bread rolls after the walk. My brother cooked a lovely lunch of roast pork, lamb and veggies. He even made a delicious baked cheesecake for dessert. .

What lovely Mother's Day you all had.  ;D

After my shift in maternity - which was a very nice day, mum and I went out for afternoon tea. A lovely café and had iced coffee and halved our mini caramel tart and mini fruit flan. Doing a luncheon next Sunday for all the family when DH is home and we will have a double blessing to celebrate.  :D
