What are you cooking today?

What a gorgeous colour Chookie. I've made some apricot jam and some of my version of passata. I picked up some slightly cheap apricots and a box of tomatoes at my Italian grocer. The tomatoes were $15 for a 10kg box. They are all roma tomatoes.

How would use use it Chookie - in a salad dressing and what else?

Judy, I mix it with a bit of Mayo for a salad dressing, however the latest craze is for non alcoholic cocktails.  These are often based on similar mixes such as this vinegar.
Can be tipped over ice with ginger beer or soda water.
Some friends came yesterday and were amazed at the taste.
I crushed the plums in theTMX. Too small to remove pips. I’m going to try and reduce the sugar in the next lot.

Interesting Chookie.  Can’t drink alcohol at the moment,, it dries out my mouth too much.

Judy , I’ve transferred the recipe on to the Forum. You might like to try 1/2. Batch.  Could buy 500 g bag of frozen berries fron supermarket.

I think the vinegar would do the same thing wine does for me Chookie, the recipe looks great though.

Recently I made biscuits. The first was an old favourite, ChocChip Cookies.

The second was Chocolate Hobnobs.

Both batches of biscuits didn’t last long 😂

I’m just so over cooking with plums and peaches.  Made a curry last night for a little light relief.

Smashed chickpea sandwich filling for lunches; a very unorthodox lasagne (the only part that was recognisable as lasagne was the pasta!) and a roast vege frittata.

I've made some of Chookie's White Peach Jam, I needed to add an extra bit of weight so I added a normal peach, A Date and Walnut Slice and a Classic Loaf.

Apple crumble cake and cornflake biscuits.

Don’t you hate it when the veg stock concentrate container is empty!   It lasts for ever then all of a sudden it runs out LOL.  I have made a fresh batch this afternoon, it’s not really like cooking something though as you can’t eat it.

Such an incredibly useful item though. I don’t bother with other stock concentrates and use the veggie one for everything.
