Bet your thermie was happy to be back in action J.d :)

Well my freezers are bursting again, so I am hoping next week no cooking, cleaning & packing.

Spaghetti tetrazinni, Jamie itIaly
Pork san boy chow for dinner with spicy fried rice & regular rice, cp might or might not like the spicy version
Chicken & camembert burgers for tomorrw night
Rissotto to make arancini balls
Something else for the freezer but gone ???

No cooking for me, Open House this weekend so my poor thermomix spent its first day and night in the cupboard :o:o:o

Making ginger and soy salmon for dinner, with coconut rice - recipe is on the recipe community. Am going to use brown basmati instead, and serve with some snow peas and carrot too.

I will post the flapjack recipe for you all in non  *: but not for a few days.

Today I made chookies choc delight, and pizza.



Dough made this morning, left to rise in the fridge while we were out to lunch. http://www.forumthermomix.com/index.php?topic=12205.0



Made 6 pizzas and 5 mini bacon rolls for me. Flattened bread covered with MJ's  tomato paste  http://www.forumthermomix.com/index.php?topic=2193.30
and layered with bacon. Rolled up and sliced. Put in muffin cases, proved and baked. ( I should have sprayed the cases)

I pulsed in the TM, but used the pan for browning the shallots and dried cherries etc....I will make it again, so see how the TM goes next time.

Im keen to make the artichoke/lemon tepenade next....lots of nice ones to pick from, and majority just whizzed up in TM.

Dried Cherry Tepenade

4 Tbsp olive oil
3 Tbsp chopped shallots
1 cup dried cherries (I bought bulk pack online)
5 Tbsp red wine vinegar
2-3 tsp brown sugar
1 tsp dried ground ginger
1/2 cup chopped pecans
1 tsp fresh lemon juice
Salt & pepper

Heat 1 Tbsp olive oil over medium heat, and sauté shallots until they begin to brown (2-3 mins).
Add dried cherries, & 3 Tbsp of the red wine vinegar, cook until softened.
Turn heat to low and  add brown sugar & ginger, stirring until sugar is dissolved and incorporated.
Transfer  to food processor, add remaining 3 Tbsp olive oil, remaining 2 Tbsp vinegar, the nuts & lemon juice.
Blend until a thick paste forms.
Season with salt & pepper.  Add 1-2 Tbsp water as needed, to thin to a spreadable consistency  (I didn't bother adding water, and just blitzed all together on turbo)


I have put a copy of this into Starters and Snacks
