That was the practise one TMXer that DD took to work. The next one I'm telling him he has to nurse all the way home.

DD's co workers loved the cake Chookie. One doctor is a Vegan so DD explained that it had lots of eggs etc. The doctor declared "it doesn't matter what's in cake, I'll eat it!"
May all dairy items in your fridge be of questionable vintage.

What difference does the freshness of the eggs make? I only have laid yesterday eggs.

Probably not a lot.  If you can,  leave the egg whites on the kitchen bench for a couple of hours.  They will whip better.   Love this cake,  think I will make it for Easter and decorate it with eggs.

Trudy,  this cake is so easy and yet so festive.  If I want to make a cake for a special occasion,  this is the one I make.
Two things,  you need lemon butter and potato flour.

I am going to make this tomorrow. It sounds delicious, plus I have a bag of potato flour in the cupboard that I'd like to find a use for.

Any good lemon butter recipes?

DH wants me to make it dairy free, but I think I'll try the original first!

Help please!

Once cooked, the cake was layered - at the bottom was like a rubbery baked custard and at the top was spongy egg whitey cake. What did I do wrong?

I think you didn't fold the egg whites in enough.  Possibly they weren't stiff enough.

It might be that they weren't folded in enough - I was worried about deflating them. They were pretty stiff though. I'll try again when I have enough eggs :) chooks are not laying well at the moment.

P,  my chooks are not laying well either.  Always happens about Easter.   
I had another look at the recipe,( even though I made it a few weeks ago for friends) and remembered that when you whip with the TMX, you can end up with. Some liquid egg white at the end.  Best to discard this.  Hope this helps.

bumping! :)  Love to try this soon but only have really fresh eggs at the moment.  Will wait a couple of days - chooks are laying well now after the moult ;D
