Crumbed lamb cutlets and a vegetable mornay using up all the bits of left over veg in the fridge.  The last of the stewed apples for dessert.   Pumpkin soup for me.

I think I’ll go more vegetarian . Soup, with Cauli base to make it creamy and then add other veggies.

Chookie, I eat lots of vegetarian food it suits my health problems.

Tonight the men are having beef casserole, smashed potatoes, green beans and a tomato & onion dish.   I will have vegetable soup and vanilla yogurt for dessert.

Last night I cooked a chicken and veggie soup and added rice at the end. Made 2 meals. This cooking for one is a bit of a challenge.

I think you need to be very disciplined when cooking for one ... most weekends I am up here by myself and just snack / nibble my way through the day and don't eat a real meal or very properly at all.  If DH is with me I behave with my food!

It would be wonderful if those that cooked for one could share, but then you would need to like similar things. My Mum got fed up and tried the meals you can have delivered. She didn't last long with that though.

I also find it a problem cooking for one.  Because I eat very little meat of chicken I normally just have what ever veg the family are eating or soup unless I make some type of vegetarian dish.

I would love to suggest some lovely vegetarian / vegan meals to you, Margaret, but many have cashews.  I will try to sort some options out that the meat eaters also will like.

Are you OK with lentil, beans, etc.?
