Title: Enough Rice for the whole family.
Post by: achookwoman on February 19, 2012, 08:13:21 am
Every time I cook this I mean to post the recipe.  As you can see from the photo it makes more than cooking it in the basket.
Below is a description of what I do ,  but you could tip it into the Thermoserver to absorb the water.

250g rice
480g of boiling water
salt

Tip rice into TMX bowl
Add boiling water
Set dial to 5 mins/ Varoma/ speed 1.
Turn off and place tea towel over top to prevent evaporation.
or tip into Thermoserver and set aside for 25 mins.

If you wish you could cook onion/garlic in bowl first and then follow directions.

For brown rice

250g brown short grain rice,                                                                                                                                                     480g of boiling water.

Set dial 10 mins/ Varoma/ speed 1
Tip into Thermosaver,  ( I warmed it first with boiling water)
Stand with lid on for 35 mins.

this recipe makes 730g or nearly 6 cups of cooked rice

Uni - I made 2 batches - 1 just plain and the other one I added

frozen corn, peas and beans a MC full of each
a handful of dry shiitake mushrooms
1 tbs of garlic and 50 g of onion + 2 bay leaves

I love it when easy gets easier. You are a legend Chookie.

mcmich - This was so easy. I don't think I will cook rice any other way now. Made it last night and turned it into fried rice.

KerrynN - This worked really well although I did get some rice stick to the bottom of the bowl in that 5 minutes.

Uni - makes great sushi rice too.

MJ has posted another alternative on page 4 of this thread - Spiced Basmati Rice

Not only that Chookie, it also frees up the TMX to cook something to accompany the rice.  You've got 25 minutes to make it.

Judy,  as I have 2 bowls,  i usually leave it in the TMX bowl and at the end of 25 mins.,  use a fork to scrape it into another serving bowl.

Chookie, would you say you prefer rice cooked this way or in the steaming basket if it was just for you and DH?

Judy, I always cook it this way,  and freeze any that is left over.  Even my Chinese DIL likes it,  and she is very fussy about her rice.

It also reheats well in the Microwave.

Wow, chookie, I thought rice was easy easy in TM, this is great as it frees up the TM.

So it just keeps cooking in the thermoserver?!?!?!?!?!?!?

Wow

Thanks Chookie, that's great. I don't have 2 bowls so putting it in the
thermoserver would give me (as JD suggested) 25mins to make the main.
Turning it into savoury rice is brilliant Fundj.
I just looove the forum.

Nazar,  I think the initial time with the boiling water might need to be increased to 10 mins.  And the standing time to 35 mins.  I will give it a go for you and let you know.

l can give it a go myself . thank you for the ofter
l was just wondering if anybody had done it
we dont eat white rice as it tends to make my husband feel sick
but brown rice does not affect him

nazar,  it works.   After 35 mins standing in Thermoserver it had a very slight bit of texture.  I would say it was cooked.

So for brown short grain rice.

250g brown short grain rice,                                                                                                                                                     480g of boiling water.

set dial 10 mins/ Varoma/ speed 1
Tip into Thermosaver,  ( I warmed it first with boiling water)
Stand with lid on for 35 mins.

BINGO.

Thanks for the brown rice conversion, Chookie.  I love brown rice but don't always cook it because it takes just that little bit longer, but this is a brilliant solution.  Looks like it was a long day for you.

Frozzie,  don't sleep well.  Over stimulated after day in Melb.  ;D
Mcm.  Glad you like it.
Marina,  how about this?  Mix some of the brown rice with mock rice and steamed silverbeet.  Stir through some cheese,  stud with cherry toms., and sprinkle with bread crumbs  and cheese.  Might need a bit of onion and garlic. ??( Alyce's onions and Tenina's garlic), Bake.   Sorta Hunza Pie.

Chookie I really think you should write a recipe book with all these wonderful ideas of yours. You are always trying something different and do your own thing rather than use recipe books all the time.  It would be like a CWA recipe book for TMX owners.

That adaptation sounds, good, Chookie.  I'm going to have to go on a huge cooking spree as a treat to me after I get through the next three hectic weeks (well, pehaps I will have to wait until Easter when I will have a good few days to concentrate on cooking).

I agree, I'd definitely buy it. Even if it was your ideas from here it would be nice to have them in one easily accessible place.  If you do decide to, can I  put in a plug for producing it as an e-book?

An e-book is an excellent idea - we all obviously have internet access - if you are like me and hate to take the actual book into the cooking area as it always gets splattered, etc., with an e-book you can print off the recipes and just take a single sheet of paper into the kitchen (this makes me wonder about copyright complications though).

Anyway, I digress, Chookie, you are so helpful and brimming with ideas, thoughts and recipes that a book would be great, but I somehow think you are pretty busy already and taking on such a project is easier said than done.  However, should you ever go ahead you have a huge number of encouraging potential customers here and on your blog (http://achookwoman.blogspot.com.au/) - in fact, you've just about got your book ready-made from your blog - perhaps we should all simply go there and use that as your recipe book!

Ohh thank you Chookie  :-* :-* :-*. Can now dispose of my rice cooker (which I had kept because I need to cook large amounts of rice). Now have enough space for my new toy- a food dehydrator from Aldi  ;D.

As for your cookbook, pretty please???. No pressure but would Christmas be too soon ;D ;D ;D

Haven't I read somewhere on the forum that it's possible to make pasta in a similar way too?  Or am I dreaming it?  I've been trying to find it and can't, so perhaps I did dream it ...  :-)) :P
Title: Re: Enough Rice for the whole family.
Post by: judydawn on March 01, 2012, 06:00:50 pm
You are not dreaming Caroline.  In Alyce's Quick Fix in the Thermomix she has a recipe called creamy tuna pasta bake.
Using 400g buckwheat pasta, she places it in the thermosaver or a saucepan and covers it with boiling water, seals with a lid and leaves it for 15 minutes before draining it and placing it in the bottom of a casserole dish. The tuna sauce is made, pour over the top and it is baked for 20 minutes.
I substituted the buckwheat past for normal wheat spiral pasta which obviously swelled to a whole heap more than the buckwheat would but it was cooked to perfection after the 20 minute soaking with this method.  I have tried it with spaghetti but that needed 4 minutes boiling in a pan at the end of the 20 minutes as it was a little too al dente for my liking.
This is probably where you read something like this.

Chookie, I'm all for the e-book idea!

Just a query on the rice though. Has anyone done the ratio for a larger quantity? I always cook 400g in the basket, and there isn't a lot left after my hungry boys have powered through it. (Don't you just KNOW that rice and grated cheese is the best meal of all time?! According to fussy Master 8) How much would actually fit in the thermoserver to cook this way? I love the idea of freeing up the TMX.

kjmt,  this recipe makes 730g or nearly 6 cups of cooked rice.  I haven't done it, but you could probably increase the amount of rice and water by a quater and cook it for 7 mins.

Thanks  :)

The rice need to be kept warm , so that it continues to 'cook'.  Either a Thermos or there are other containers which are similar to the , are available.  I cook the rice at a time convienient to me,  leave it in the jug until ready, set aside and reheat in the microwave when I wish to serve it.

And, here's another version:

Spiced Basmati Rice

250g rice

480g of boiling water
1 Tbsp ghee
3 cloves
3 cardamom pods
1 stick cinnamon
1 tsp turmeric
1 Tbsp pine nuts

Place rice in TM basket and rinse really well under cold water(until water runs clear). Allow to drain and rest for half an hour.
When ready to cook:
Add ghee to TM bowl and melt on Varoma, speed 1 for 30 seconds. Add rice and sauté on Varoma, for 1 minute, speed 1.
Add all other ingredients.
Cook at Varoma for 5 minutes, speed 1.
Tip into Thermoserver and set aside for 25 mins.

If you don't want to wait, don't wash the rice.

Oh, forgot to add! Take out the cardamom pods before serving. They are a tad unpleasant to chew on if you're not expecting them... ;)
