Title: Can yoghurt be made with Zymil Milk?
Post by: APMSAM on November 19, 2012, 11:33:04 pm
Has anyone made yoghurt in their Thermomix using Zymil Milk or any other lactose free milk?

Thanks - Sara

Hi Sara.. yes possibly.. however being a lactose free milk, I imagine you would have to add something like a little  honey or sugar for the bacteria to feed on.  Off memory, I think it is the lactose that feeds the bacteria.

Apmsam, I have made lactose free yogurt a few times with out any problems.(when the supermarket runs out I'd the milk I usually use).  I now heat the milk for an hr at 90degrees,  let it cool, add 6 drops of calcium chloride for 2 litres then use two different cultures from Green Living.Australia.
I always preheat my thermoserver then  Wrap it in  a fleecy blanket for about 12 hrs. No problems.

I have made lactose free yoghurt with the full cream zymil. You just have to add a a couple of tablespoons of the lactose free yogurt from the supermarket. Turns out great!
