A quick and easy everyday biscuit
Ingredients:
115g raw sugar (3 secs, Speed 9)
125g butter, room temperature
1 egg, room temperature
1 tsp vanilla essence
160g SR flour
100g Choc Bits
Approx 1 ½ cups lightly crushed Cornflakes, in separate bowl
Method:
Preheat moderate oven (my oven 175o), and put baking paper on tray.
Make caster sugar in TM. Cream together sugar and butter 3 minutes, Speed 3-4. and intermittently stop to scrape down bowl
Add egg and vanilla essence to TM bowl, 3 secs, Speed 4.
Add flour and choc bits approx 5 secs, Speed 4, Reverse, until just combined.
Lightly spoon tablespoons of mixture into balls, and coat with Cornflakes.
Bake 10-12 minutes. Cool on tray for 5 minutes before placing on wire rack.
(This is fairly similar to one that faffa posted, but its not the same one :D These are ready when they are lightly brown around the edges and you can move them slightly on the tray when you gently push them)

maddy - these have always been a favourite of my Hubby and the kids. Made 2 batches....one choc chip, the other sultana.
I just wish the jar was like that Tim Tam ad on t.v.......and the jar would just replenish itself.
Denzelmum - Yum, made smaller size for my toddler and normal size for the rest of the family. Thank you for sharing this recipe! I baked about 8-9 minutes for baby size.

JulieO - Made these today, so quick and easy. I used sultanas instead of choc. I will reduce the sugar slightly next time but otherwise they were perfect, thanks CP.
JD - Thanks for this recipe CP, just like the ones I used to bake when the girls were little - many moons ago.
ES - Thanks for this recipe - I made them tonight in my Thermo Chef. The only tweak was to reduce the sugar to 100g. I was a little worried as the mixture was very soft, but they are delicious. I went out to a meeting tonight, and when I got home 1/3 had been eaten.
Sparkle - My 4 boys exclaimed them to be the best yet....and then inhaled the lot 😳. They WERE beautiful, thanks for the recipe. Off to make another batch to take to a morning tea tomorrow, think I'll need to hide this lot though 😉
Nighteyes fitz - OMG!!! These are what I call Canteen Cocaine Chocolate Cornflake Cookies!! Or the CCCCC!!! A lady in our school canteen makes them and she has to make double because we eat them all before we put them out for recess!! I'm sooo HAPPY!!!
inthekitchen - The recipe worked perfectly, I loved the tip of 'being ready when you can push the biscuits about on the tray, it described it exactly!
CC - Made these today to take to my upholstery class tomorrow. Thanks CP, great recipe. CP the class loved the biscuits. I've just emailed the recipe, (converted back) to three of the girls.

Hi JD, I baked about 8-9 minutes for baby size. Grandchildren would be very happy with lovely treats!

Ha ha, they are pretty good and economical. Got this recipe off my MIL many moons ago.

My ex mil made these without chocolate, just with cornflakes or occasionally Frosties.
Always popular.

You could probably sub the choc with sultanas if you wished for a less guilt free version. I don't tho

Thanks for posting the recipe :) My kids are back to school next week, so I'm testing out recipes for lunch boxes. I'll definitely be sticking this recipe on the fridge to make regularly. I made a batch of these biscuits today, I used sultanas, chopped pecans and glace cherries instead of choc bits and crushed the cornflakes and mixed them in with everything else. Very nice. Half of them are gone already. :D
