Satay Sauce

Another recipe from Chris's Cafe.

Place in TMX bowl and process

1 cup coconut milk
1/2 cup peanut butter
1 Tablespoon fish sauce
1 tablespoon soy sauce 1 Tablespoon of fresh ginger
1 Tablespoon of palm or brown sugar
Chilli to taste

Can be thinned

Thanks Chookie, I like cooking my satay sauce to make it a bit thicker.  This sounds like a nice combo

This does look nice.
Question.....does it need to have the chilli?  We're not huge on chillies here, but thought maybe a little sweet chilli sauce would suffice?

Maddy I often use 1/2 tspn sambal oelek instead of chillies in recipes - it would work in this recipe too, as would your suggestion of a bit of sweet chilli sauce to your taste.

I don't think I've ever used sambal oelek  ???  I guess a 1/2 tsp wouldn't make it too hot.
I used to eat food with chillies, but since having the 2 kids....my system can't handle it anymore  :-))

No, wouldn't be too hot, just adds a nice flavour I think. You could start with 1/4 tspn and see what you think as this is only a sauce not a full recipe of vegies etc to serve 4.

Maddy,  JD's suggestion is good.   However you could leave it out as there is a lot of ginger and this will give it a kick,  without the chilli.

isn't it funny what having kids will do to us! I used to eat hot food all the time until number 1 child came along and even now I am still trying to get my system used to it (19 years and a few more kids later lol) some days it is ok, other days I really suffer still  ??? ??? ???

We like our satay sauce to be really thick, how long would you cook it for Mr T and on what temp? I wouldn't have a clue...

hi there,
just wanted to say thanks for the recipe I made this for dh tonight and he loved it he said it was the best satay he has ever eaten.  Although I wasn't sure about the cooking time etc in tmx, and as I am veggo I was using tmx to make my tea so in the end I made it in tmx but popped it in the microwave to heat up the sauce..  I love being a good cook!  (I ended up using 2 fresh chilli's seeds and all as he loves things hot, he said it was hot at the start but not at the end ) I hate hot stuff so no good for me..

From memory I cooked it about 15 minutes at 90 degrees?  May have to check if I made notes.

We had this tonight and it was delicious served over grilled chicken and rice. I blitzed a small chilli and about 3cm of ginger first, then added the other ingredients. Oh and I didn't have coconut milk so used evap. milk and a dash of coconut essence. Hubby loved it too.
