Hi everyone

I am wondering if any else is experienceing faults with older TMXs?  I have had mine since Oct 2010 and have had a few things replaced under warranty (blade seal, lid seal and spatula). The printing on the front is slowly rubbing off, but not bad enough to get it replaced.

 About 4 months ago I had trouble with the scales.  It was shipped to Melbourne at my expense and they found nothing wrong.  It is now under measuring again 4 months later.  The feet are clean, the chord is out and it is still under measuring.  And now my measuring cup broke in half last week and I have noticed the hard plastic at the base of the blades where it is contact with the base of the machine is cracking and perishing.

I know I can't expect it to last forever, but I was hoping for a little longer than 4 years!!  Brisbane now has a workshop, so I will taking it there next week.

Anyone else with an older machine having similar problems or a solution?

Condiments and Sauces / Chili sauce

Is it one "l" or two???  Regardless, here is a recipe for Chilli sauce I just made as Father's Day gifts:

Chillis - the amount of chillies you use depends on what kind and how hot you want the sauce to be.  I read recipes that called for 250g of chillies, we only had about 25g of super hot Bird's Eye Chillies - this was enough!
1 tin tomatoes (or 400g fresh tomatoes)
1/4 cup sugar
!/4 cup white wine vinegar

Blitz all the ingredients together on speed 5 for 10 seconds
Scrape down the sides of the bowl and cook for 15 minutes, speed 1, 100 degrees
Once cooked blend all ingredients turning the dial slowly up to speed 10 for 30 seconds

Store in sterilised bottles in the fridge ready for pouring

To decrease the heat, you can take the seeds and the membrane out of the chillies.  You can also add water to the sauce to dilute it.

WARNING: if you start cutting or deseading the chillies, wear rubber gloves or make sure you wash your hands thoroughly before touching anything else - especially your eyes or mouth  :'(

The first thing that I never make is jam/marmalade.  I made one batch of marmalade in the TMX and the citrus was too bitty and it was runny. :P  I now just make it in my breadmaker (which has a jam setting).  I also use Jamsetta every time as I am too scared to just trust the natural pectin in the fruit.  Can you convince me/tell me how to make a great marmalade in the TMX.  Links, tips, tricks all gratefully accepted

Whenever I cook mince (chicken, beef or lamb), it sticks to the bottom of the TMX.  What temp, speed do others use.?

Recipe Book Recipe Reviews / A hint for using generic arborio rice

I know a good quality arborio rice is recommended when making risotto and I found my risottos were either watery or overlooked when I used sunrice or supermarket brand rice. If you have the same problem, I have accidentally discovered that if you cook the risotto for 15 mins at 90 degrees and then a further 10 mins at 100 degrees you get a perfect risotto every time.  This method also seems to eliminate the need to rest the risotto in the thermoserver for some reason

I don't use particular recipe either.  Rather I use the formula:
380g rice to 1100g liquid

I then add whatever I want in appropriate order for ingredient eg cook onion and garlic first; add cooked chicken or baby spinach at the end etc.

I use the directions from the EDC mushroom risotto other than the temp and time.

Questions? Technical Issues? The Survival Guide / spatula disintegrating

My spatula is disintegrating and it is only 12 months old.  It has the nicks and cuts of most peoples spatulas from being used in the TM, but where the handle meets the other part (don't know what that is called - the blade, the flat bit??) the plastic is actually falling off in tiny flecks.  This part of the spatula can not physically come into contact with the blades so it is not from use per se.

I tried to ring my consultant, but she hasn't returned my call.  I contacted someone closer geographically and she says that they are not covered by warranty because they get damaged by use. 

Does anyone have any other answer as I don't believe this is due to use, but some kind of fault with this batch of spatula perhaps.

Questions? Technical Issues? The Survival Guide / Chopping Nuts

I a search but came up with nothing.  I am sure there is something here, but not sure where to look.  I wanted to chop nuts to put in muesli bar, but I had nut meal and whole nuts with nothing in between.  I used speed 7 for up to 5 seconds.  I tried again with just almonds as they were the hardest nuts and the same thing happened a mix of almond meal and whole nuts.  Is there a secret to chopping nuts into fairly even pieces?

Well, I was a bit nervous trying out playdough as I have a fantastic and foolproof microwave recipe, but decided the kids could wait if it didn't work and I had to fall back on my old faithful.....but....it was perfect, possibly even better end result than my microwave recipe, so easy too and even the clean up wasn't too bad: a handful of flour blitzed on speed 10 a couple of times and most of the sticky mess was gone, the rest was just easy to wash up.  10/10

Recipe Requests / Can you make cornmeal?

I asked this on Recipe Community, but got no replies so far.  Just wondering if I can make cornmeal (polenta) in the TMX.  I want to make cornchips but don't have the polenta.  I could go and buy some, but why bother if I can just make it.  Corn is much cheaper than polenta!!!

Is there anyone out who menu plans for a failsafe diet.  I am feeling really stuck for ideas and the kids (age 4,2 and 7 months) are getting more and more fussy.  Some nights I am just tearing my hair out trying to think of new ideas!!  TIA

Does anyone have a recipe for DF icecream?  I am craving icecream, but can't eat it atm while breastfeeding DD2.  She may grow out of the intolerance, but I may also have a another year or more with no icecream YIKES!!

Special Diets / Failsafe carob balls

140g butter or butter substitute
30g weet-bix (approx 2 weet-bix)
20g carob powder
170g plain flour
125g brown sugar

Pre-heat oven to 180°C
Place butter or substitute in TM bowl and melt for 2 minutes at 60°C on speed 4
Add remaining ingredients and mix for 30 seconds on speed 5
Scrape down the sides of the bowl
Mix on speed 3-4 for a further 30 seconds or until all the ingredients are combined
Roll teaspoonfuls of mixture into balls and place on baking tray
Bake for 15 minutes in pre-heated oven
Allow to cool

Ingredients
120g butter or failsafe margarine
2 eggs
100g milk or rice milk
1 teaspoon vanilla essence
120g brown sugar
120g self raising flour
20-30g carob powder depending on taste
1 teaspoon baking powder


Pre-heat oven to 180°C. Prepare a 20cm square pan or loaf tin.

If using butter, place in TM bowl and melt for 2 minutes at 60°C on speed 4. (Dairy free alternatives like Nuttalex won't need to be melted)

Add remaining ingredients and mix for 30 seconds on speed 5.

Pour into cake tin and bake in centre of pre-heated oven for 35 minutes or until skewer inserted into centre of cake comes out clean.  Dust with icing sugar to serve

Chit Chat / new to forum thermomix and forums in general

Hi all
I am new to all this forum stuff, so still trying to navigate my way around.  I joined the Thermomix Recipe Community first and then here.  I was wondering if there was a way to save recipes that you like.  I have figured out how to do it on the Recipe Community, but not here - do I just need to cut and paste them into my own document or something?
