Until now , I haven't had much luck making Gluten Free bread. i have made this for a friend and it looks good. I might have known and should have gone straight to Dan Lepard. He really is a wonderful reliable baker. This recipe has been adapted from his recipe in 'Short and Sweet' for the TMX.
20g Soya flour
50g potato flour
300g corn flour ( I used white Wings)
25g Psylliam husk powder
2 generous teaspoons of dried yeast
1 teaspoon of salt
2 teaspoons of vinegar
15 mls of EVOO, plus extra for handling the dough
2 Tablespoons of plain Yoghurt
325 mls of warm water
30 mls of milk
DO
Put everything in TMX bowl , keeping yeast away from salt
Knead for 1 min.(It will look very sloppy)
Leave in Bowl of TMX until double. (about 1 hour)
Line 19cm tin with baking paper.
Roll dough and place seam side down in tin.
Place in a warm spot and leave for 90 mins.
DURING LAST 20 mins SET OVEN TO 240 C , OR 220 FF.
As the loaf will not rise in the oven, it is important to have a hot oven.
Bake 50 mins for a large loaf , 35 mins for 2 small loaves.
Remove to wire rack and cover with a cloth to keep crust soft.
Will keep for 2/3 days and can be frozen.
I think it is important that the small amounts are weighed accurately. so use digital scales'

Uni, you are a devil ;D ;D ;D ;D
-
Chookie I think I love you. I have a friend coming over for lunch who needs gluten free and I didn't think of Dan L.
-
Cookie, start early as the 2nd rise takes 90 mins. I made 2 small loaves and cooked to perfection in 35 mins.
-
They look super Chookie. Are you going to post the recipe & conversion for those wanting GF bread?
-
Will do, Judy. Do you think people are interested?
-
Of course they would be Chookie, there are lots of GF people on here.
-
Added photo of sliced loaf. Uni, guess what happened to the slice? Recipe later.
-
Ooh hanging out for this one please chookie! :-*
-

Looks great Chookie! Well done! I'm sure all of us coeliacs are drooling at your bread. I don't have thisbcookbook and can we please beg you to post the recipe? As you probably know, even though a gluten free diet is lot more improved compared to a few years ago, we are all on the lookout for that elusive 'wonder bread' !
-
I have to own up, I ate it. ;D ;D ;D And it was very nice. Not cakey like other GF bread I have tried. Frankly I am amazed at how good it is. It takes a whole packet of Cornflour, (White Wings), so is not cheap. However for those who are lusting after wheat bread, I think this might be the answer. I have added the recipe to the original post.
Think I might fiddle with the recipe and see if it will carry some seeds.
Merlin, have a go and ask for help if you have any problems.
-
i just knew it was you ;D
-
OK Uni, I want to see you 'run' with this one. ;D ;D ;D
-
Thanks for posting the recipe. Will definitely give it a go. I just noticed Coles is selling their own brand of cornflour now which is gluten free and cheaper than the other brands.

Thank for that Merlin.

Thanks for posting this recipe back Chookie. :-* I would like to try this when my SIL visits next month as she has started to eat gluten free. :)
-
I made this yesterday. It didn't look like the picture - but for some reason my bread never does! However it was super tasty. I also substituted Chia Seeds as I was out of Psyllium Husk.
It's pretty much been devoured by DH and I so a success I'd say!!
A fantastic accompaniment for soup.
-
megant, the psyllium husks are essential to the texture and look of this bread. Give it another go using the husks.
-
OK thanks :)
I definitely will try again this week, if it tastes better than this one I'll be a happy woman! Finding good gluten free bread recipes that don't have a thousand different ingredients is soooooo hard.
-
Hi chookie, I can't get the psyllium husks, what else can I use?
Cheers DJ.
-
DJ I bought my psyillium husks from an Asian grocery stall but Healthy Supplies (http://www.healthysupplies.co.uk/soluble-fibre-psyllium-husks-300g.html) sell it and they post. ;)
-
Thanks CC.
-
Chookie do you need to grind the psyillium husks or they go in as they are?
-
Wonder, I think the ones I used were already ground. Dan says that the psyllium is essential for the texture. Wonder I have been thinking that you might be able to sub 1/2 of the corn flour with ground up quinoa grain or flakes to get something similar to that expensive loaf that you are buying.
-
Thanks Chookie, I'm away this weekend but might give it a try the following and see how it works out.
