Title: Sour Dough Pancakes

These are just the best pancakes.  Not quite as thin as crepes,  but not stodgy like some pancakes.  They can be used as a base for sweet or savory food.

Serves 4

In to TMX bowl add 15g. butter, 5mins/ temp 50 /speed 1.
Then add,  in order listed, 170g. milk
                                      3 eggs
                                      120g Sour Dough Starter
Mix 10 sec/ sp 5
Add 1/2 teaspoon of salt ,  and 100g plain flour.
Mix 10 sec/sp 5
Stand at room temp for 30 mins.

Heat frying pan and lubricate with butter.
Cook until golden, flip,  cook other side.

Lubricate between each pancake.

This is the most favourite pancake recipe in our house!  Last weekend DH made pancakes for the kids using the EDC recipe (our sourdough starter was in desperate need of attention having not been fed for a few weeks), and the verdict was "nowhere near as good as the sourdough ones".

Katiej - They were beautiful with maple syrup. We hardly ever have pancakes for breakfast, but it just so happens we had pancakes last weekend and were easily able to compare the two.  These sourdough pancakes were definitely the best.

Shazzy - ok so very  dumb question the starter I am assuming would have had to have been out of the fridge and fed and waited until it has gone bubbly - ie couldn't use the starter straight from the fridge??? Would have liked to have made these for the boys for morning tea.

Chookie - Good question. When i want to use the starter and have forgotten to remove it,  I remove the amount I need,  put it in a warm spot over a dish of warm/hot water.  Not touching the water.  When it starts to show a few bubbles on the top, I use it.

Shazzy - Thanks Chookie and Karen. Made them using your method by putting the starter over hot water this morning Chookie.  We all enjoyed them. Definitely different to the normal pancake - more crepe like.  Also I think for the amount my family eat I probably need to double the recipe. Thanks Chookie will definitely be making them again.

ES - I made these for dinner on Tuesday as it was Shrove Tuesday. These were a much thinner pancake than I usually make, but they passed muster with the kids, and we had plenty.

LucyW - Can't wait to try this! Has anyone tried it on Spelt flour??

Chookie - Should be much the same.  Maybe a bit heavier. May be a good idea to add 1 teaspoon if bread improver.

They would be handy to have in the freezer for filling with leftovers for a savoury meal wouldn't they Chookie?

Oops just re-read the recipe and you did mention savoury  :-))

Not a dumb question at all shazzy - and I dont know the right answer.  I happened to have starter out on the bench anyway because I was planning to make a loaf of bread.  You could always try it and see ........  it is not like you have to wait for the pancake batter to rise or anything that needs the starter to be really active, so I dont see why it wouldnt work - but I defer to the greater knowledge of chookie and cookie and other sourdough experts

These are the best pancakes ever, thanks Chookie.

We had them for breakfast today, this time made using the rye starter I got from Karen. 
They were slightly different from those made with the white starter, but delicious and I don't think I could choose better them.  Just lovely and a nice treat for breakfast (occasionally!).

Making this for special breakfast today.  The culture was made by DH, his birthday present was sourdough bread class in Brassarie bread and ever since he loves making sourdough from scratch.  We have way too mnay culture in the fridge, good way to use it up.  Thank you, Chookie.

Karen,  nice to know.  We feel the same here but think we are probably biased.  Think the SD ones are healthier, although depends on what you put on them.

Obbie,  i could send you some dehydrated starter.  Pm me if you would like some.   But you could follow the directions as Karen suggests.  It is fun to make your own.
