I took it down to DDs cookie, it was a huge casserole dish and enough to feed the 4 of them.  I still have plenty of soup in the freezer and now want to try a risotto next.

This Prawn & Saffron Risotto is from Cooking for me and You which contains recipes for 2.  You can even make them for 1 person which I should have done because 2 serves turned out to be enough for 4 meals for me.  Easy to make and all ingredients on hand.  I can’t post a review under the book due to my taste buds not being right yet but it looks great, the prawns were lovely but the rice wasn’t that easy for me to eat although I do OK with home made rice pudding. I did add more liquid than the recipe specified and cooked the rice for 3 minutes longer than was stated.

Judy, I find salmon has a better mouth feel.  Tuna always seems dry to me.
Pizza tonight.not sure that I should be eating this.

Chookie im glad the pizza was ok for you. 
We are having leftovers from RTE Chilli mac n cheese. We are camped at a free camp in Three Springs. No power, so we will have to heat it on the stove. I used to teach here in 1989, 1990, 1991. I drove up the 55 km from Carnamah where DH was teaching each day. It was very pleasant. We had a walk round town after we arrived. Not much has changed. DD and GS for dinner tonight.  DD has decided to go GF.  Will try making GF pizza base. 
Baking Apples with Quince Apricot paste.  Everyone is now eating diabetic friendly food  ;D ;D

It will be good for them all Chookie and it beats having to cook different food for different members of the family. If you didn’t tell them they probably wouldn’t even know.

Diabetics just eat very healthily. It’s so much easier to do only one meal. DD occasionally turns her nose up but she can cook as well as me and prefers not to do her own on a week night. She never says anything.....lucky for her. 😀😀

Beef casserole for the men with mixed veg and mashed potato.  Fish for me with the veg.

A nice tradition cookie, I’m a baked beans lover too.
Bought a pack of ricotta/pumpkin ravioli at Costco yesterday, turned some béchamel sauce into a broccoli sauce and served it with a potato & spinach bake, the latter was the tastiest part of the meal. Followed it up with a serve of bread and butter pudding.

Love Bakd Beans and Bread and Butter Pud.
Made his Diabetic friendly Mushroom Risotto . I converted it to TMX and added Asparagus.
