Recipe Review-Red and Green Christmas Shortbread

Red and Green Christmas Shortbread
Thermomix Festive Season 2008
Tweaking
I had to knead the dough for a little more than the 40 seconds stated and after I had rolled it into a log shape I refridgerated it for a while before I sliced it.
I didn't put the white chocolate on it as they looked lovely.
I found these to be very tasty and just right with the red and green colouring.

Oh goody, thanks! I was looking at making these.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Recipe Name: Red and Green Christmas Shortbread

Book Name:Festive Cookbook (in both the 2008 and 2009 editions)

Tweaking details:
This is a family favourite and don't last long!

First tweak is to steam the pistachios for about 5 minutes to soften them, making them easier to cut.

Then the main tweak I do, is after rolling the dough into logs in baking paper, refridgerate them for a few hours or overnight. This will make the dough nice and firm for slicing. Otherwise it will fall apart making it very difficult to form nice biscuits.  I also use a serated knife to slice them, which makes slicing through the nuts easier as well.

White chocolate is a MUST with these. Even better is that white chocolate infused with Vanilla (it's an organic brand in the supermarket) If I'm feeling too lazy to dip them in white chocolate, then I add those little white chocolate drops to the dough mix instead. But if you have the time, dipping them is the way to go.

JD I'm procrastinating making these becaue I know there will be some serious quality testing.

Thanks. The Avatar is from November at the Jazz Festival. Thankfully it's small and you can't see the icecream all over DD's face that she had just thoroughly enjoyed!

Should have just taken the accolades for the bickies and gone with it. 

The jazz festival is certainly a big event in Wang.  Worth advertising the fact that you support them.

Oh I do take full credit for those bickies Thermomixer - I made every single one of them! Both for the Wangaratta demo and the Corowa one.

Maybe next year I'll post something re the Jazz Festival. Brown Brothers have recently been awarded with appreciation as they are the only sponsors that have sponsored the Jazz Festival evey year since it first began.  It is a massive weekend for Wangaratta. Accommadation is booked 12 months out and they actually billet people out to stay with local families.  8)
