Funny, mine is never gritty with the hazelnuts - but that could be because I don't roast them first, just use them raw, skin and all.  This is my recipe here.  I think I'll try it with macadamias next time though!!

This is what I did with my choc hazelnut spread last night...  YUM!!  (Instructions here)

They look amazing. Now I have to go and clean the monitor-it has lick marks all over it. :D

Now that you mention it Jo, I think that is what I did with my last lot that is smooth. Used RAW nuts. Of course I forgot to write down what I did but that rings a bell as I have raw nuts in my pantry  :)

Went to Macadamia Farm in Wyong last weekend.  Made this, using soy milk. Yum...

Thanks Terstoo!  My boys love Nutella so we made your "macatella" this evening as a better substitute.

Organic macadamian nuts are VERY EXPENSIVE. I'm wondering how to use Hazelnuts. Would I need to take off the skin ?

This is the Chocolate and Hazelnut Spread Recipe from the F&E Cooking and the hazelnuts are blanched( author Janie Turner)
100g sugar
100g blanched Hazelnuts
100g plain chocolate,broken into pieces
100g milk
70g soft butter
1. Grind the sugar10sec/ speed10
2.Add Hazelnuts and chocolate and grate 20sec/ speed8
3. Add the milk and butter and mix together 10sec/ speed 7
4. Scrape down the sides and lid of the bowl.Heat3 minutes/50c/speed2 or until the mixture is smooth.Fill sterilized jars and store in the fridge.
Makes 450g

I would like to give this a go. Do you have to store the spread in the fridge because with Nutella, i would just keep it in the pantry.
