My first self sown basil is now ready to take some leaves off and I have 2 eggs left until shopping. This is on for tomorrow.

This is a lovely quiche. My DH and DS don't like sweet potato or pumpkin so I didn't use it. Instead I added ham and caramelised onion. The pastry was nice and crisp too
I managed to keep a small slice for lunch today, and I think that it was even nicer cold

Here is a photo of the quiche before I added the egg/milk mixture, and then the cooked quiche

I've been meaning to post here for a while to say how wonderful this pastry is in my electric pie maker as the bottom of the pies. The recipe makes just enough for the 4 pies, and I use puff pastry for the lids.
The other day, I didn't have any cream, so I substituted sour cream and it worked wonderfully. The kids demanded pies again the next day, and I didn't have enough sour cream left, so I used half sour cream and half Greek  yogurt, and the pastry still turned out well.
Thanks for a great recipe Kimmy!
