Espresso Mushroom Cake – converted from Woolies fresh mag
This is rich and chocolatey/coffee-ey and with a tiny hint of mushroom if you really stop and think about it! Well worth making.
125g unsalted butter (I used salted)
250g dark chocolate
2 T espresso coffee powder
125g caster sugar (I used 75g raw)
150g button mushrooms
125g hazelnut meal (I used almonds and milled them)
5 eggs separated
cocoa to serve
Preheat oven to 180°C, line the base of a 22cm springform tin and lightly grease base and sides.
Mill nuts til fine and set aside.
Chop mushrooms til fine and set aside with nuts.
Add chocolate, butter, coffee and sugar to TM and melt for 5 mins 50° speed 1 or until melted and smooth.
Set speed to 3 and add egg yolks one at a time until well mixed in and smooth, takes about 30-40 seconds.
Add mushroom/nut mixture and mix for 10 seconds speed 3 or until well mixed in.
Whip egg whites until firm peaks form. (I do this in my old mixmaster as I still cannot for the life of me get my egg whites right in my TM!) Then gently fold into the chocolate mixture.
Pour into tin and bake 50-60 minutes or until set (mine took 50 minutes).
Cool completely in the tin, then dust with cocoa and serve. (With a good dollop of thick cream I reckon!)

That's different, never heard of mushrooms in a cake before. Would love to see a picture and tell me Nikkit, did the family pick the mystery ingredient?

I've just had a look in the Woolworths magazine and it looks like an everyday chocolate type of cake.

Very interesting but I've tried "additions" to cakes before but my lot always seem to pick up on the "mystery" ingredient. :-)) Personally I love trying different things ;D

Sounds interesting. I would never have thought to include mushrooms in a chocolate cake?

My cake turned out just like the picture in the magazine- so I was happy. ;D I will try and post a pic in a minute. Fingers crossed my computer and I don't have a D & M discussion about its parentage or something!
And no - no one picked the mystery ingredient. Miss 17 who hates mushrooms ate 2 pieces yesterday arvo. When I told her what was in it, she went back for a 3rd! Also had my girlfriend called in before we went out for a ride and I gave her a piece and she loved it and was amazed when I told her it had mushies in it. She wants the recipe now.
I put the remainder in the fridge and will try a bit today to see if the flavour has changed any, will let you know.

Nikkit, I noticed this recipe and a few other unusual ones only yesterday in Fresh magazine. Good to know it looks and tastes good.

I put the cake in the fridge overnight and we had the rest cold. It was good. Kind of went fudgy and dense and the coffee/choccy flavour was nice. Miss 17 had another 3 pieces and said she loves the cake even if it does have mushies in it, make it again!
