CARROT, ALMOND & ORANGE CAKE

My Daughter Courtney made this lovely moist cake for Mother's Day so I thought I would share it with you.

CARROT, ALMOND & ORANGE CAKE

1 orange (unpeeled & any seeds removed)
150grms butter (melted)
155grms (3/4 cup) caster sugar
2 eggs
2 (about 320grms) carrots, peeled & grated
225grms (11/2 cups) plain flour
110grms almond meal
3 teaspoons baking powder
50grms (1/2 cup flaked almonds)

1.  Preheat oven to 180c
2.  Line 22 cm round cake tin
3.  Grind almonds 20 secs on speed 8 and set aside
4.  Puree orange 20-30 seconds speed 8
5.  Add carrots for 15-20 seconds speed 6
6.  Add melted butter, sugar & eggs on reverse/speed 4 untill well combined
7.  Add flour, almond meal & baking powder on reverse/speed 4 untill combined
8.  Pour into prepared tin, top with some flaked, slivered or chopped almonds and bake for approx 1 hour and 10 mins or untill
     cooked.

yum, my kids would love this. not for school though (nut free school)

Sounds lovely! I am going to dig out an old recipe of mine to make a carrot cake too! Its made with wholemeal flour, lots of nuts! and cream cheese topping, will try and adapt it and post it to share. I love carrot cake! :P :P :P

trudy not sure if it was a typo but I only used 3 teaspoons of baking powder.

The verdict is in 5/5 .super moist and easy. It’s a keeper.

Next time will use flaked almonds instead of chopped ones
I managed to save a tiny piece to freeze (i like to test most things i make)

My orange was 310 grams
I only had 2 teaspoons baking powder so i added 1teaspoon of bi carb soda
I chopped the carrots in the bowl 1st the added the orange
Keep an eye on the speed and time, for me some to high and long or 2 low
I used 20 cm round cake tin
I used chopped almond
Make sure you leave a overhang with the baking paper or use a springform pan

In the oven now.  Forgot to put flaked almond on top  :-\
