We are having jacket potatoes too. I’m putting some chilli mince onto them with natural yoghurt instead of sour cream.

Cookie, the men like onions, mushrooms & bacon on theirs.  I also roasted a few small tomatoes to go with them.

Tonight we are having tuna pasta bake, baby potatoes, corn & broccoli.

Steak , DD made potato roti it was nice for a change . Thinking of another iron rich meal for dinner .

Last night made grilled salmon topped with lemon slices, a black bean and brown rice salad and stir fried veggies. GC heated lemon butter in microwave and tipped on ice cream. ( I watched )

Saw an interesting recipe by Maggie Beer.  Quince paste mixed with Balsamic vinegar and olive oil and brushed on Pork chops and then grilled in the oven. At first i thought the marinade was too strong , but it wasn’t. Nice change.  Think it would be nice on chicken and perhaps on pumpkin.  Will try.

I’ll make a note to try that on pumpkin Chookie. I found 2 tubs of quince paste in the fridge the other day, goodness knows how old it is but it does have a long life doesn’t it?

Judy, the Quince paste that I used was at least 5 years old. Still ok.
Last night chicken schnitzel, coleslaw, mashed potatoes .
Tonight fish.
