Limes limes limes

So I have a box of limes.  What recipes could I use?

I'm thinking lime sorbet (any good recipes for this ?) but also anything else.

In the past when I have had excess limes, I have used a veggie peeler to thinly peel off the zest, and frozen that in a snap lock bag for future use.  Then I juiced the limes and froze the juice in ice-cube trays.  That way you have both the zest and the juice available whenever you need them.

If you are cooking with lots of citrus, you can make use of the juiced fruit by making citrus vinegar to use for cleaning.  Just get a large glass jar with a lid, pack in the juiced citrus halves and cover with cheap white vinegar.  Let it sit for weeks to months.  You can add extra vinegar and extra fruit as you go.  When the jar is full and has "steeped" for a few weeks, strain and use the citrus vinegar for cleaning.  i.e. shower screens, toilets, glass cleaner etc etc or as an alternative to fabric softener or dishwasher rinse-aid.

I like that idea as a rinse aid, I always use white vinegar, be nice to have a citrus fragrance.

I forgot to explain about the frozen zest:  if you have frozen it in peeled strips, you will need to pulverise it in TMX to make it fine like grated zest before using.  I usually use the frozen zest in making cakes and biscuits, or curd, where I blend the zest with the sugar beforehand, then go ahead with the rest of the recipe.

I have 2 bowls of small lemons which have fallen from the tree next door so I've just made myself a batch of lemon dishwasher/washing machine rinse aid. I've been using plain vinegar for 20 years in my washing machine and never had to call a repairman. Thanks Karen for a great idea.

You could make lime sugar great on pancakes. 8)
 Thinly peel the zest from two limes or more depending on the size of your jar, in the bottom of a large jar put 1/3 cup of sugar then add enough zest to just cover the sugar, (1 layer), then add enough sugar to cover the zest then more zest. Keep layering until the jar is full or you've run out of zest, finishing off with about 1/3 cup of sugar. Leave for about two months so the sugar can absorb all the oils from the zest.  Or a quicker way is to dry the zest either in the oven or a dehydrator then blitz it in the TM with about a cup  and a half of sugar for every two limes. You could always make lime cordial or lemon and lime cordial, great with lemonade and a dash of bitters.

We love this recipe for Portuguese chicken. It uses half a cup of lime juice in the marinade. We use chicken Marylands instead of whole chickens and cook them in the Weber.
