yesterday i made lambmeat balls creole way, with lots of spices.. and i used the thermomix to make a creole style sauce.. using union, chili, garlic, cumin, fresh tomatos.. red and yellow capsicum then in the end added paprikapowder and home made yoghurt.

it was delish, served with rice

I don't know if the latest EDC has different instructions stefbelgium but mine says to blend the cream for 1-3 minutes to separate (the time it takes depends on the freshness of your cream) on speed 4 with the butterfly in.  Once separated,  strain the buttermilk carefully.  Remove butterfly.  Place 500g of cold water into TM bowl and mix for 5-10 seconds on speed 4. Strain the liquid again. Do this step 3 times it is suggested but not in the book, by forum members.

hey guys, i am new to the forum and i do not have the book you  get with your thermomix, so i do not have the exact recipe for making butter.. i think i got most of it from the forum, but could someone summarize it for me?

As far as i understood:
600 ml double cream, room temperature

butterfly - 3 minutes speed 4
drain
without butterfly add 500 ml icecold water - speed 5-6 for 30 seconds
repeat for two times
add salt and mix again for 5 seconds
work the butter to remove the excess water

is this about right?  tnx for your post

Hello Everyone..

My name is stef and i am a foodie... Not that i mind ! 
I love to cook and i NEED to cook a lot: i have a foodallergy and can not use any food that has additives added to it, no fermented sauces (soy and so on), no MSG !, no aroma's...   no processed food at all..

That means making all basic stuff myself: jams, ketchup, tomatopaste, spicemixes and so on.

A few weeks ago i discovered Thermomix and yes i am the proud owner of one.
I discovered this forum while looking for more information regarding making butter and knew i had to join.
So hear i am, hoping to learn a lot from you guys.

i will be publishing my first cooking book soon, all about cooking without food additives .. and i have some pics available on FB ... anyone interested, ljust add me..... stef allegaert.
