Lemon Kefir Ice Cream
The inspiration for this Ice Cream came from the Blog Chocolate and Zucchini.  I gave myself a Kefir kit for Xmas, and as cooking kills the good bugs,  I was using Eat you Books to search for uncooked recipes.  This is one that I found.  I used Meyer lemon which has a mild taste.  It took 50 minutes to churn and I used the sorbet paddle.  The basic mix was made in the TMX.

Into TMX bowl measure
400 mils Kefir. ( or plain yoghurt)
Zest,  (remove with vegetable pealed) and 60 mils.  of lemon juice.
130 mils of Agave syrup.  ( or sweetener of choice).
Optional, good splash of Lemoncello.

Mix at speed 10 for 20 seconds.
Churn in Ice Cream machine for 50 mins approx.

JD - I've made a batch of this using the rest of my batch of Yuzu Curd (80g) from ITM2, Jalna Premium vanilla yoghurt, a splash of limoncello and a few squirts of agave syrup.  Waiting for it to firm up in the freezer but a sample spoonful tasted rather nice.

It does sound nice Chookie, I'm almost out of ice-cream so will put yogurt on my shopping list and try it.  I still have some of Uni's powerful limoncello I can use and heaps of lemons have been blown off my neighbour's tree and into my back yard.

Agave syrup from the Health Food shop and yes there are a couple of good websites,  Some one  called Dom seems to be the authority as many refer back to him.  As with many things that you 'grow',  there is some conflicting advice.  I am finding the kit quite easy to use and have just made some soft ' cheese ' which was surprisingly good.  I also like this Ice cream,  but think it is more a sorbet to gelati. Am about to make a second lot.

Judy ,  I have never heard of lemons blowing off the tree.  .??  I think you would like this recipe.

They've been doing it for a couple of years now Chookie when we have a strong westerly - I'm sure more end up in my yard than theirs  :D  They're not the greatest quality, not very juicy - I think the tree is probably distressed through lack of water.

I bought the kit from an Organic shop in Dalesford , Victoria.  The address in the kit is.......

Oooh thankyou for this - I have some kefir fermenting atm. I generaly just do a banana milkshake with ricemalt syrup in it but this may be a nice change.

I have had success making the 'cheese' and adding it to pesto to make a dip.

And I have had NO success with double fermenting.
