Has anyone made the Glazed Orange Peel from the EDC cookbook? What do you use it for? I happen to have some spare oranges and am wondering what to do with them. Thanks!

Yes ,  I make Citrus Peel in the TMX,  however I just zap the peel and cook it on the stove.  I put it in Xmas puds,  fruit puds ,Hot X buns.  I put it into small packets and freeze it.  More info if required.

Haven't made any as yet.  Not sure about the recipe in the EDC, but some can be dipped in chocolate as an after dinner treat too.

I dont have the EDC cooking book but somehow i think it might be easier just to glaze your peel on the stove. Just make a sirup with water and sugar and simmer your orange peel in that until tender (10-15 minutes). If you want to add some flavors to the orange peel you can boil them 10 minutes in pure water, dry them and let them rest for 1 hour in your favorite alcohol before boiling them in the sirup.

I candy a lot of citrus peel and have been doing so for many years.  Several years back I developed the process of doing small batches in the microwave.  I recommend trying it first with just one or two oranges, or one large one.

 The process is detailed here in post # 28 (http://forums.egullet.org/index.php?/topic/89439-candied-citrus-peel-the-topic/) - you have to scroll down a ways.

I omitted the instruction about the syrup - you must mix the sugar with hot water and mix it completely prior to pouring it over the peel.

you will see photos illustrating my method of  removing the peel -  you will get a neater end product with less work - I guarantee it.

I use this method with one orange or with twenty - it saves me a great deal of time.   That is a soup spoon, not a teaspoon.
