Beetroot recipes.
« on: October 11, 2011, 09:28:53 am »
Hi everyone. I've been reading your comments & advice for a couple of months now & finally decided to get involved myself! I've been experimenting with my TM for a few months now with mostlly great results & am certainly having lots of fun. My only problem is that I live in an open plan apartment & the noise TM & I make can be very intrusive on the rest of the family. They do like the results of experiments though.
My request today is for any interesting beetroot recipes. I have recently harvested a heap & have so far made tzatziki, salad & soup but am interested to see if any of you wonderful cooks have a new angle. My family aren't in love with beetroot so I'm looking for new ideas. I think I might not grow them again for a while...they are beautiful, & I've been cooking the tops in pies & sauces too but I don't have a big freezer!
I think I once saw a beetroot chocolate cake recipe which sounds a little extreme though probably delicious!
Any comments are welcome..
Lizzie

Thanks Judydawn. I've been following your posts for some time & really respect your advice. I've used some of your recommendations before & will certainly try some of these. I actually found a beetroot, cashew dip through your recommendation to check out Cream Puff's list. Will try that & as I have a fresh coconut in the fridge, the beetroot curry too! I might make a relish too..I do like relishes. Will let you know how they went. Cheers

I love beetroot.  It's wonderfully healthy for you and recent scientific studies have shown that drinking the juice or consuming beetroot has the ability to lower blood pressure and improve sports recovery and performance.  One delightful way that I love beetroot, which is non TM, is to simply peel, cut into smallish chunks and to roast it drizzled with a little oil and sea salt/pepper.  This can then be tossed through a leafy salad once cooled or eaten warm.  I often make up a big serve of roasted veggies (beetroot, pumpkin, sweet potato and potato) and roast witrh a few garlic cloves (skin on).  You get the wonderful flavour of the garlic infused through the veggies without the garlicy after taste.

Hey Judydawn. I've now made the beetroot chocolate cake &  the dip. I thought they were both great but my hubbie was perplexed by the cake! "Why?" he said. He's not huge on beetroot though. My kids like both. Made an ice cream sandwich with the leftover cake.It was huge! Am now going to try the relish & maybe the jam so I can give some away.
I think I won't grow it again..not popular enough, though I did make spinach pie with the (slightly pink) greens very successfully. All like that one.

Yesterday someone was telling me about a Dutch way of serving rissoles on a bed of grated fresh beetroot and something else.  Can't remember the name of the dish and can't recall the partner of the beetroot.

Does beetroot grated with apple sound familiar to anyone of Dutch heritage?

This page jogged my hazy memory - http://ashy-macbean.com/snacks/beetrootapple.htm
