These are a much healthier version to what I'd normally make as a carrot muffin, and I like the idea of adding quinoa as I think it adds extra texture. I added small chopped up dates (optional, but added for the extra sweetness and chunkiness). Uses quite a bit of carrot, and a lot less sugar than I'm used to. Turns out 18 lovely muffins, and yes I'd definitely make again. I'll take a photo next time I make myself a cup of tea.

I made a batch of these this morning and like CP, I added the optional dates. These feel quite a heavy muffin, not sweet at all but they have a nice, moist texture. I think they would be nicer with some sort of creamy icing which would defeat the object of a healthy muffin but I would do that if I was serving to visitors. For myself, I wouldn't bother but I will try some of them reheated with hot custard as a dessert.

I found some caramel sauce leftover from sticky date puddings in the freezer so I poured that over a re-heated muffin and served it with vanilla ice-cream. It was the sweetness I was looking for.
