Just whisked this up in Thelma and it was delicious! I used virgin coconut oil instead of macadamia so there's a faint coconut taste to it. Not too sweet, and very moist. I had to pop some of the mix in the oven though as I'd run out of room (I used 6 normal cupcake sized moulds and lots of teeny tiny ones as I'm making cakes for a lot of children) and the baked ones were a lot crunchier and not as flavoursome. Great recipe! Amazingly constructed sans egg and dairy.

These are *really* juicy so - if I took the rind off with a grater for lots of things, then juiced them lightly for lemon butter, could I then use the lemons for your cake? Cause I'm getting 40+ mL of juice out of each lemon and that seems a lot :) so I could get even more bang for my buck.

Oh the lemon syrup idea sounds great! How much zest roughly to say 30 minutes of syrup? Cause they are large lemons and there are 14 of them so the further I can make this go, the happier I will be :).

Have a look at my blog - I've adapted my cake what I use for parties and decorating to Thelma and it's up there as a lemon poppyseed one ATM. It's a dense butter cake as I need it to be pretty robust for decorating. Just leave out the lemon zest and juice and add a teaspoon of vanilla paste or essence to it instead.

Yep it works fine. Just make sure the bowl is very dry before doing so and it will work fine. And because you're essentially making a natural msg powder, it will make your food taste awesome!!

You could leave them out and use any other dried fruit or else a tablespoon of brown sugar instead to add a sweet note. Dried cranberries would give a lovely festive hint to it!

Works for zest too - I find if the zest is damp then it doesn't  chop well as it flings out and sticks.

I'm finding that cooking with breast in the Tmx often ends up dry so we're using more thigh than previously. I can't wait to try this recipe though!

I was just in the bookstore the other day reading foodporn / cookbooks and thinking that there needed to be a Tmx one on the shelf! I would be honoured to be included - have a look at my (very new but there are some original recipes on there already!) blog and let me know if you'd like to use anything.

I found that there aren't many kangaroo recipes around which is a shame so I made one last night. It was delicious.

I actually already have the stock concentrate thanks to my dear friend/tmx dealer! I think a risotto is on the cards. Spinach from the garden and herbs and lemon perhaps.

The trick is to rinse in cold water first with a dash of detergent. This takes the onion type smells right out of the situation. Then wash with hot water. Hot water first up will "set" the smell. This was the advice I got as a Tupperware demonstrator for cutting boards and choppers and it's never failed :).

Perhaps try washing in cold water now? That might solve the problem.
