Recipe Book Recipe Reviews / Re: Recipe Review - Lentil Hotpot EDC
« on: August 24, 2010, 01:40:25 pm »
I just made this and it was pretty good.  Next time I would reduce the amount of stock paste as it was a bit salty.  I never soak green/brown lentils and I didn't this time either, just added 10 minutes to the cooking time and increased the amount of liquid to about 700g.  The lentils were just barely cooked and not all the liquid absorbed, so I think the leftovers will be even better tomorrow.  I also increased the veg content a bit, using a whole leek and adding a few spring onions and half a capsicum as well as a bay leaf.  It went down well with my partner, as anything with bacon and sausage would, and I will make it again.  Would be good with mashed potato I think, or even better spaetzle.  Any Thermomix recipes for spaetzle?  I'm about to have a look...

Soups / Re: Lentil & Spinach soup
« on: August 22, 2010, 02:58:02 pm »
I made this yesterday, and it was great.  I used a few more red lentils because I didn't want it to be too thin, and probably didn't need to as it was plenty thick enough.  I used a bit less spinach because I didn't have that much - 200g is a lot! - and I too was amazed at how it disappeared into the soup.  I used korma paste - about a heaped teaspoon.  Those were all the changes I think.  It was delicious.  Thanks judydawn!

achookwoman, I don't know that the buckwheat has a particular taste (that I can identify, anyway) - but the bread doesn't taste like white bread!  I may try your proving method too - thanks.

Introduce Yourself / Update
« on: August 14, 2010, 04:06:04 pm »
So I have now had my lovely Thermomix for two and a half weeks.  I haven't had the delivery demo yet, and this is the first weekend I have been home to enjoy it fully, so it is still early days, but I have used it every single day I think.

When I bought it I thought the two main ways I could recoup the cost of it (eventually!) would be by baking our own bread and avoiding takeaway from the local noodle bar when I'm tired and can't be bothered cooking.  So I am very happy to report that after only a few tries I have a bread recipe we both love, and recently when we got home from work late and my partner asked, "Would you like to get takeaway?" I replied, "No thank you, I'd like to cook in my Thermomix."  Hope it lasts!

He has shown little interest in cooking with it, unfortunately.  However, he has mastered drying it up and putting it back together properly, and that will do for now.  I've read too many stories about disasters with machines that have been used without the bases, etc.  Hopefully the cooking will come.

Thanks to all the contributors to the forum, especially the regulars and experts - it's great!

Oops, I forgot to say I'm sorry if I should have added this to another thread rather than starting a new one.  I read a few about bread but couldn't decide where to put it!

Recipe Name:  Basic Bread
Book Name:  Everyday Cooking
Tweaking details:
100g buckwheat
310g lukewarm water
2 tsp dry yeast
1 tsp salt
420g bread flour
20g olive oil
I make two batches, one after the other, for my two bread tins.  Prove the first time wrapped in my Thermomat until doubled in size (takes a while - it's cold in our kitchen!) then into the tins, brush tops with water, and into the cold oven with just the oven light on.  Leave to rise again for maybe half an hour  or basically just until the dough has filled out the bottom of the tin.  Turn oven on to 200C and bake for about 35 minutes I think, or until they sound hollow.
Review:  Warning:  I don't like my bread fluffy.  So if you do, you should ignore my suggestions!  This doesn't make a super tall loaf, but respectable.  I love it.  It makes absolutely superb toast!
Score: (out of 5*) 5

I just got grumpy reading all of you saying you didn't like the EDC version, only the Indian cookbook version - the last thing I need is another cookbook! >:(  But then a search led me to brazen's blog and I got quite cheery again! :)  Thanks!   What's wrong with the EDC version, by the way - anything I could easily fix when I try it?

Recipe Book Recipe Reviews / Re: Review- Asian fish fillets - EDC
« on: August 14, 2010, 11:41:34 am »
Just thought I'd add that I made this with chicken breast fillet instead of fish last week and it was great.  Didn't make the sauce but did drizzle the fish, rice and veg once on the plate with soy sauce and sesame oil.  Very yummy.  Tonight I'm going to try it with Albany herring - not firm white fish, admittedly, but I like it, it's local, and I think it's worth a try.

Introduce Yourself / Hi!
« on: July 29, 2010, 02:59:46 pm »
Hi!  I received my new Thermomix yesterday and am very excited.  For the last few weeks I have been reading this forum as part of my pre-purchase research - conducted partly to see if I could find anyone who wasn't happy with theirs - very difficult.

I first saw a Thermomix demo several years ago and thought it was wonderful but I couldn't really justify it.  Then I went to another one a few weeks ago, and although nothing has changed, I just thought, why not.  I was quite surprised that my partner said, "If you want one, just get one." ... until he casually mentioned that he could really do with a new laptop!  Fair enough.

Since yesterday evening I have made pizza (yum), lemon custard (yum yum), porridge (not successful, although I managed to more or less rescue it, but I gather I'm not the only one with porridge "issues") and mushroom risotto (delicious).  I am feeling quite sad that I have to go to a conference over the weekend and won't be able to play!

Am really enjoying this forum - thanks!
