Thanks for the speedy replies!

Will leave it as it is for now and see tmw then.

I forgot to add that I did dry the jars in oven, but not lids (just fished them out of hot water).

Hope this wont get buried under!

I've made pineapple jam (to bring back childhood memories of spreading pineapple jam on hot toast and Golden Circle has had to delete that line years ago which broke my heart/stomach!) tonite however I have a couple of questions to ask.

1. I put in 750g chopped up fresh pineapple pieces with 500g rapudura sugar in a bowl to 'marinate' for an hour.
2. Dumped the mix into TM and quickly minced it and cooked it for 42 mins at 90 degrees c with speed of 2. Added juice of a lemon as it would not set or thicken as I'd like it to.
3. Poured all into 'sterilised' jars and sealed with Kleen View cover as I used recycled twist-top jars, then put the lids on top.

So my questions are:

1. If the jam is still runny tmw, can I do it again and add Jamsetter (I couldn't find my packet in pantry!) for how long?
2. Will Kleen View cover do the job rather than recycled twist-top lids?
3. Do I still need to do waterbath the jars for 5 mins, even with Kleen Views and lids on?

I would like to make this for freezer, however wonders how I should go about it - like freeze it before bake or bake then freeze and reheat? I intend to divide this into 4 containers for freezer so the amount doesn't matter.

I don't have parsnip, so what would be a good substitute?

Will omit the chili make any difference?

In what type of containers do you guys store the VSC in that works best for you?

But I am still boggled at the size of ground whole wheat grains - 11 cups? Eleven cups??  :-\ That would equal a lot of grains? or ...

Still haven't got a go on whole grain bread... still going through other stuff here.

Wow... all this is so interesting.

I've had my gallbladder out as it was 'finished' along with over 60+ corn-sized stones about 12 years ago after I've had my first baby. The attacks came just a couple of weeks after the birth and was so bad that I cannot do anything for days - spewin, etc - you see?  :-\

It was so hard to do anything like investigating why this happened so I just went and got it out. I was told that I was lucky that they've got it out in time. Guess it was that bad.

It was only just about 10 mins ago that I finally realised that all the symptoms I've been feeling for the last 10 years were just after the operation - so I am now investigating whether it is related to the absence of the gallbladder that affects my own body. Sighs... that's why I was saying that its all so interesting!

I am now wondering what's with appendicitis... as I've got mine out last Dec!!  :-))

Main Dishes / Overloaded Sheppie Pie

Name of Recipe: Overloaded Sheppie Pie
Number of People: Enough for 10 to 12 people or freeze the half!
Ingredients:

2 onions (peeled and halved)
1 or 2 teaspoons garlic (crushed, I used one from jar)
1 bagful of mushrooms
250g pumpkin (seeded and skinless,etc)
1 small radish (I got one in fridge that I need to use up...)
2 med zucchinis
2 med carrots
1 small green capsicum
1 jar of pasta sauce (500g)
1 tin of chick peas (400g) - drained and rinsed
200g thinly sliced broccoli florets
1kg potatoes (peeled and chopped)
1/4 cup cheese (grated - I used one from last cooking - perconi mixed with lemon zest)
dollops of butter (preferred homemade from TMX!  ;D )

Preparation:

Before you begin, put potatoes in pot and have it boiled to tender while you do the next steps below.

1. Put in onions with garlic, have it chopped then saute for 3 mins at 1 on 100c.
2. Throw in mushrooms - chop it quickly and saute it further for 2 mins at 1 on 100c.
3. Pop in pumpkin and radish, chop them into the mixture and saute for a min. Then pour this mixture on the bottom of a casserole dish (large one preferred).

4. Have both zucchinis, capsicum and carrots in for some fine chopping and pour in the pasta sauce, have it 'cooked' for 5 mins at 1 on 100c - depends how hot your bowl is anyway.
5. Add the chickpeas and thrash it lightly for 10 secs at 4. Then pour this sauce mixture on top of the above mixture.

6. Add the sliced broccoli florets on top.

7. Have the potatoes mashed to your preference - I mashed it with butter and milk along with bit of salt, then put in some of the cheese n lemon mixture for flavour.

8. Put the mashed potatoes on top of the mixtures in the casserole and sprinkle some cheese and dollop several butters on top.

9. Bung it in the oven for 20 mins at 180degrees (fan forced here).

Very yummy and wholesome - it went well with my family.

Tips/Hints:

The chickpeas can be substituted with cooked mince I guess if wanted meat in the casserole - I had to go vegetarian cos of my little dear nephew.

Frankly I just made up as I go along as I need to use up lots of vegetables and it tasted a bit sweet and light rather than the usual heavy and savoury, if you know what I mean?  :-))

I freeze the half of the casserole for next time. I served this with steamed broccoli and green beans along with buttered sourdough bread. Very filling...

What about using Macadamia oil? It may be more delicate and light enough for this?

I had a delicious but hard to spread a choc macadamia spread from QLD's Tropical World a few years ago and wanted to make similar...

This receipe could work for me too as I am not keen on the idea of making the EDC's without cocoa...

Gonna post my results at the Jam/Chutney spot then.

We've only ventured as far as to beetroot chutney, apart from roasted beetroot, beetroot dip, etc - the usual savoury dishes.

It is harder to think beetroot as sweet, eh? Oh I remembered making a beetroot choc cake which flopped big time...  :-\

I am thinking of making this spread, but would like to know if anyone did more tweakings?

So far I think I'd try:

50g sugar
60g toasted hazelnuts
100g dark choc
70g butter
50g milk, add as needed
1 to 2 teaspoons cocoa.

Would this work?

By the way, how would you really sterilise the jars?

I had to be! I really used TMX today as much as I could...

Within 8 hours this arvo-evening, I made Hot Cross Buns from EDC - including piping and syrup - very delicious! And 2 batches of butter from cream. I made rice from it as well for dinner. It's resting inside a dishwasher for the night!  ;) The bowl itself of course - not the machine!  ;D

I usually just used TMX for one item or two, but not the whole work - so I guess it is paying off by itself now!

Now I just need to find more Bakers Flour so I can make more Hot Cross Buns - so good that my kids are fighting over the last 3 buns...

Now what next challenge should I try....

Oh yea - anyone tried to make chai from TMX?? I just love Chai Latte... but wondering if there's a great receipe out there?  :-))

All good advice above.

I dream of improve my kitchen too but will have to be contented with what I've got.

My advice is to not have stove/oven right next to both food pantry and fridge - at the last house, the pantry was next to the oven and we have high rate of weevils which drove us crazy. At this present house, we've got it next to the fridge which send the bill high as the it works overtime to cool down when the oven's on!  >:(

I love the one that has drawer just under the sink, perfect use for wasted space there! As well the corners - I hate the corner cupboards! lol... you can see by now that I've got the kitchen I dont really like, eh? ;)

Oh by the way, ensure you get to check how high the overhead cupboards are going to be put up - for two reasons, I'd go with full cupboards that goes up all the way to ceiling, rather than under the cornices - the cleaning up there is really painful! And that you can really reach it with a suitable kitchen ladder - some sizes requires a full scale operation to get some containers out of the cupboard...  ;D

I do recommend drawers as much than cupboards, especially with the oldies complaining that they can't bend down far enough to reach the bottom under the bench. IKEA's kitchens has some great stuff too.

Forgot to come back here to say thanks for the recommendation on using Bimby Choc Cake...

I've baked two batches into two tins and cut it up into this:



It was all gone within 2 days. Quite delicious! So thanks again! Am going to make it again for my DD who's turning 8 next week!

Let see if I can turn out great Easter Buns today! ;)
