From Womes Weekly, pizza pizzazz
Ingredients
Zucchini Dough
3tsp dried yeast
1tsp salt
2 tsps sugar
485g plain flour
1 zucchini, 150g. - i used 200g
20g parmessan
1tbs olive oil
180ms warm water - might need less if you use more zucchini
To Make dough,
Grate cheese in TM
Chop zucchini & chop in TM
Add rest of ingredients
Knead 4 mins, leave in bowl for approx 1hr
Filling
130g tomato pesto
155g chopped ham
120g grated cheddar cheese
Pre-heat oven 200
Once dough risen, roll out to a rectangle, spread with pesto, add ham & cheese.
Roll up tightly & cut in to 12 portions
Cook for 15-20 mins, i cooked for 17, my oven cooks fast, probably 15mins in a miele oven.
Filling can be anything you like, i used pizza sauce & bacon as that was what was in my fridge.
Enjoy, verdict, great by all 3

Yes, we have some cucumber plants flowering. Need to dig up the zucchinis & plant more cucumbers.

I have cucumber plants too! :D - but they are not up to the flowering stage yet! :)

Made this and tweak the filling with wilted baby spinach and fetta cheese. Turn out fantastic, DD and DS looooves this, great way to sneak more vege on their diet.

Sadly cp wont touch spinach, but happy he he has this in his lunch box.

Sorry for (yet another) dumb question. Are the instructions for making the dough somewhere?

Sorry, I didn't realise that meant 'to make dough'. I read it as first make dough, then grate cheese etc, where it says add rest of ingredients I assumed the dough went back in. Apologies.

DD loooves this, she requested to make another batch and help out as well. We always make mini size, half the dough and have two different filiing, smaller size is more managable for little one, if they want more they can have extra ;)
This time our filling is Ozemite and cheese, pizza style with tomato base, soy rasher and cheese.
Half gone within half an hour, she shared with neighbours too and they love it.

Have these in the oven ATM, divided the dough into 1/4s, spread pizza sauce, chopped bacon, cheese and pizza topper on 1/4, vegemite, butter and cheese on another 1/4, miss2 ate another 1/4 while 'helping' me put the toppings on the other 1/4s, still have 1/4 waiting to see the favourite topping to do it with once cooked and cooled!

That sounds wonderful Astarra - but have to say . . the thought of your oven being on makes me want to lie on the tiles in the bathroom! :o ;D . . its just reached 42 here . . . . ???

Made these for lunch today as I had a few extra kids here, and I picked another zucchini this morning. It was unanimous - they are yummy, and will be made again. Thanks H!

Well they went perfect...but somehow dissapeared even before they had made it to the cooling rack....while my back was turned.... :-\ So photo next time - there will be a next time!! ;D

Made these again for school lunches. Used shaved slices of ham which made the rolling and cutting a bit less messy. Just love this recipe. They turn out great everytime.

I made a batch of these on Wednesday, so the kids could take them for lunch on Thursday and froze the rest. They were requested for lunch on Friday too, and DD had one for brekky today and DS and his friend for lunch. I am obviously going to make them again soon ;)

Yummy yummy! I made these to freeze for DD for 3 yo preschool. I used olive oil that had been infused with lemon and they are really delish. No tomato sauce, just ham & cheese :)

Oh Hally - how good are these!! ;D ;D I made a batch this afternoon, adding in a couple of tsp of pizza herbs into the dough, and using the tomato sugo from KIS as pizza sauce. They were intended for DS1 lunchbox for school this week and some for the freezer, but watching DH and DS2 devour them, there won't be any left for the freezer.

I made these last week for the school lunch box. None of mine made it to the freezer and I have been asked to make more for the lunch box, that job tomorrow. Love sneaking the vege into the dough.

Thanks again Halex, I just remembered these little beauties when looking at my kitchen bench with 17 zucchinis sitting on - all been picked in the last few days 8)
So whipped up two batches of these and the girls have devoured them all :o .... for breakfast!!!!!!!!

I did have a chuckle at all DH's comments about how much they eat (especially miss 22mths) over the Easter weekend, was very obvious he doesn't do the cooking for them!! ???
They do eat very well, thankfully. 8)

I'm bumping this because they are sooo good. Todays ours had just tomato pesto and cheese (the fridge fairy had apparently eaten all the ham :-)) ) and they were delicious.

I love having some of these in the freezer as they are handy for a quick, on the run lunch.
