Name of Recipe:Olive Oil Crackers
Number of People:
Ingredients:
1 (150g) cup of flour
3 tbsp. olive oil
4 tbsp. water
Pinch of salt
Optional extras sesame seeds, caraway seeds, poppy seeds, grated parmesan, black pepper, thyme, rosemary, and extra salt
Preparation:
add all of ingredients to bowl,knead 30 sec, rest for 20mins knead for 3.30
Divide the dough into eight portions. Then roll your dough out just a little, adding a small sprinkle of some of your extras if you are going to
Roll out the dough as thin as you can without it breaking.
Roll your extras in, (like the sesame seeds) as this will make sure they are well incorporated into the crackers
Lay dough strips on a tray and brush with a little extra olive oil on the top; add a sprinkling of extra salt if you wish
Bake at 200C for approximately 6-7 minutes, then switch the trays around in the oven top to bottom and bake for another 6 or so minutes or until lightly golden in colour. Crackers should be crispy through.
i did one tray at a time, baked for about 9mins

They look similar to Chookie's Uni but minus the yeast - such a simple recipe. Love them!

made some using wholemeal flour i added 1tbl extra of water but i think only 1/2 would of be plenty

Please can you tel me if it is plain flour, or bread flour?

I made a batch of these late this afternoon. They are ever so easy and as Uni mentioned the dough has an incredible feel. I didn't roll mine quite thin enough this time but I will in future. I plan to make more tomorrow.

made some this morning use coconut oil and adding the seeds in the mix. ;D
baked in the AF

I've made several more batches of these. They are so nice. DH likes them with a bit of Parmesan in them and a touch of salt. He prefers that for his afternoon tea. Morning tea is a sweet biscuit. ;D
