White Bean Hummus

I love a good hummus and ran out of chick peas, so I made this one with cannellini beans instead.

WHITE BEAN HUMMUS

1 x 440g can cannellini beans
2 Tbsp tahini
4 Tbsp (about 3 lemons) lemon juice
rind of 1 lemon
1/2 tsp cumin
1/2 tsp dried oregano.
pinch salt to taste

Process for around 1 minute on speed 5 until well blended.

I used it for Dukkah Crusted Lamb wraps. I even made tabbouleh! Had to use soy grits as I didn't have any buckwheat. Easier, anyway!


A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Just like hummus! We just had it in our wraps. I added three tbsp of greek yoghurt to make it a little more runny. It was delicious.
