Title: Apple Pie EDC (2013a) pp175

This was a nice simple recipe.
I did find the dough too sticky so added about two tablespoons of flour during the kneading. I also heavily floured the rolling surface as after chilling for 30minutes as it was still sticky.
I loved steaming the apples in the Varoma (in my previous attempt I boiled them in the  *: and they boiled over  :o luckily I got to them in time to avoid serious damage).
Next time I will try to add some sultanas during the steaming, not because they were needed, but just because I like them.
I will also make the pastry  before the filling to save time.  The pastry can chill in the fridge while the apples are steaming.
As the size of apples changes so much I would prefer to weight to be listed instead of number of apples in the recipe (recipe said 6 and I used seven -650g).

I also sprinkled some sugar over the top before cooking for presentation.
I served it with ice cream, however others like CC might prefer clotted cream or custard like Amy :)

I made my third apple pie this week with this recipe... This time I didn't add enough water so the mixture was a bit crumbly. The temperature will affect this recipe,  as with most other pastries.
This time I managed to weigh the apples,  and for this deep pie dish (picture with first post) I used approx 650g raw apple pieces (peeled & sliced/chopped).

I made this one the other night, I am not sure if I am just used to store bought ones but I felt like it wasn't sweet enough/lacked flavour.
Some changes would make it better but 3/5 of for me

I sprinkled quite a bit of sugar in mine (both on the filling and top).. And used granny smith's,  what kind of apples did you use?
I agree they are very different to bought pies,  as they have less 'fillers'  in the filling. We like them this way,  but everyone has their own personal tastes :)

Every winter I keep telling myself to make an apple pie.....well tonight I finally did! A friend kindly shared the recipe from the new EDC.

I have to say that it was quite time consuming....I think it took 2.5 hours all up (but that's partly me and how slow I am with new recipes). Fortunately, it tasted really nice (well the smaller sample one I made).

I followed the recipe as it was but next time I would make the pastry first, as Jamberie suggested, and while that was resting for 30 mins in the fridge, I would cook the apples. It also says to preheat the oven in the first step. I would not do this until after the apples cook.

The pastry can be difficult to work with and I found I had to stick it in the freezer in order to try and roll it out correctly. It's hard to transfer the pastry to the baking dish without it falling apart too. I only had a rectangular baking dish so did my best to get it to that shape. It did tear in some places but I didn't really care much for looks. I also didn't have enough pastry as I wanted to make a smaller sample version to taste tonight.

I used the recommended amount of sugar and found this fine. I also enjoyed it with icecream. Not worthy of a photo though but probably won't try this again 'til next winter.

I also forgot to add that I assumed you would need butter that is cold but NO, it had to be softened. So I took the advice I had seen on Pinterest recently and grated it while cold as a way of softening it and it worked a treat!

I made this today and took heed of Jam's suggestion of making the pastry first. 

I too found the pastry a bit hard to work with as it was a warm day and it needed to be chilled again after rolling out so it wouldn't fall apart too much when lining the dish.  I also chilled the rolled out top for a few mins before putting it on the top.

I sprinkled the base of the pastry with fine semolina to stop the base from becoming soggy from the moisture in the apples and that worked a treat.

I haven't had any myself, but my family said it was really nice and so I will make it again, as it didn't take too long (with making the pastry first).  The varoma did a great job of cooking the apples too.  :)

I plan to visit some of these recipes in the EDC that I have overlooked.  :)
