Special Diets / GRAIN FREE recipes

Anyone got some recipes that are truely grain-free? IE; NO wheat (flour), rice, pasta etc
Dairy is OK, as is animal fats. Interested in the paleo / primal way of eating.

Recipe Requests / sous-vide cooking

has anyone tried / had success with using the TMX as a sous-vide???
I was just reading Thermomixers Soy Chicken inthe Varoma recipe and it mentioned to steam the chook in a bag.
Made me think of the sous-vide method.

I'm guessing that one would have to let the bag sit in the bowl basket as opposed to the Varoma trays ??? ??? ???
How accurate is the temperature gauge on the TMX?  ??? ???

anyone know of an organic, grass-fed dairy that can supply raw whole milk to the Adelaide area?????

Hi TMX'ers,
I just had pizza's for lunch, using the EDC recipe for the dough. I used 1 Teaspoon of dry yeast as I don't have the sachets.
My dough didnt rise at all in the allotted 30 minutes. Nor at all in the 15mins after forming the smaller balls.
The dough still cooked and tasted ok, well.. actually I thought the base actually HAD taste for a change. So no complaints there.
Just wondering what the conversion for dry yeast vs sachet is.

13m.o DS seemed to like it anyway.... devoured!!!

well knock me down with a feather.......  :o :o

I was on my way home from the shops and got a phone call from DH wanting some SR flour and walnuts!!!!
What the....??? :o

Apparently DH had decided that he seeing as we had a couple of over-ripe bananas hanging around he would like to try and cook the banana bread from the EDC!!

Just as well I had pulled over to take the phone call coz I almost fell over with the shock!!! Joyous shock of course!!

Am pleased to say that I didnt interfere (too much), ((apparently I annoyed him enough though)) and he did it all himself. Well, with some help from 3.5yo DD who thinks that 'Daddy can't make cake by himself"!!!

Am currently typing this with coffee in hand (so to speak) and a belly full of beautiful Banana bread, iced with some yummy cream cheese icing.


Very pleasing day!!!

Chit Chat / Slowly getting the hang of it!!

I've had my TMX for a couple of weeks now and although I'm still getting used to using it, I'm still loving it!!!
Today I made butter, bread and scones.
I used Thick cream so I had to butterfly it for an extra 2 minutes before it seperated, and then I add EVOO and a little salt at the end. DH thought it initially tasted like cream but once the additions went in, it tasted more like the Marg we use.
I used the buttermilk to make the scones and they turned out brilliantly. Very light!!
I haven't tried the bread yet. It seems fairly heavy ( I used barley instead of wheat grain ) and is a bit pale on top.
Will update later with the verdict on taste.

Tomorrow will be pumpkin and celery soup!!

Hi,
I'm KL.
I live in Adelaide, South Australia. I've really enjoyed reading the posts on this wonderful forum. Such joy and humour is a great salve for the fact that I DO NOT HAVE A Thermomix ..... YET!!! I've been to two demonstrations already though.
I'm still trying to convince DH that the money spent will be paid back 10 fold in other ways!
Just thought I'd say HI and continue to dream!!!
