Barbecued lamb patties for pitta bread
« on: May 27, 2009, 08:16:27 am »
Barbecued lamb patties with yoghurt sauce

Patties

500g minced lamb
1/2 tsp sea salt
1/2 tsp ground ginger
1/4 tsp cumin seeds
1/4 tsp groud turmeric
1/4 tsp ground cinnamon
1/4 tsp allspice (or 2 allspice)
3 black peppercorns
1/4 tsp cardamom
1/8 tsp saffron

Sauce

3/4 cup yoghurt
1/2 small red onion
1/2 bunch dill
1/2 bunch mint
1 tbsp lime juice
1 tbsp extra virgin olive oil
grinding black pepper
grinding of salt

Grind all spices on speed 9 until powdered.  Add lamb and blend on 6-7 until smooth (it's desirable to end up with lamb paste in this recipe, so don't worry about overdoing it).  Wet hands repeatedly and shape into patties.  BBQ over hot coals or gas BBQ.

For the sauce, finely chop the onion, dill and mint.  Add remaining ingredients and mix gently on 2-3 until it comes together.

Serve with pitta bread, chopped tomato and lettuce, sprinkled with the sauce.  It's lovely with freshly made, soft, warm floury pitta breads

Very nice - maybe a clove of garlic in that sauce ?  Just like in the Greek shops - only better.

Yes, you could probably steam little balls of the mix.  Garlic would be good, but I don't miss it in this recipe

Making these tomorrow morning before the dentist, then dh & ds can toss them on the bbq. Found some lamb mince in the freezer that needs to be used up, these look nce and tasty.

I have decided to have 1 or 2 nights of left overs, then a night of freshly cooked food, then left overs etc. Ths way the keft overs will go down and i am still happy cooking.

I have been told no baking. :o
